We revisit an old favorite, Belgian wit beer with oranges. This time we substituted blood oranges for regular navel oranges and experimented with two different ways to add the fruit to the beer.
Ingredients for 10 gallons:
11 lbs 12.0 oz Wheat Malt; White (2.1 SRM)
9 lbs 8.0 oz 2-row American Pale Malt (Briess)
2 lbs Vienna Malt
8.0 oz Flaked Barley (1.4 SRM)
2.00 oz Cascade Pellets [6.20 %] - Boil 60.0 min
2.00 oz Cascade Pellets [6.20 %] - Boil 10.0 min
4.0 pkg Belgian Witbier (Wyeast Labs #3944)

dont ask too much from them. they most probably are confused themselves with the measurement units

@@user-mr9tw6dj6h asking too much? I think it's a perfectly reasonable request. They must have a large percentage of people who rely on celsius and gramme measurements rather than farenheit/cups/ounces.

Nice video and thanks for adding the recipe. I would have appreciated a summary of your thoughts. Did the Juice plus rind beat the rind only brew? Or vice versa? Is adding the oranges worth the trouble, etc.?

Well for Hernan he could taste the difference and liked the version with the whole fruit added better. I struggled to differentiate the two in taste tests.

What temperature did you ferment at? Also, I like what your doing with the challenge. Give a lot of insight to so many different beers. Thanks!

Great video, excited to try this! Could you give some details on what you did to the oranges between cutting the peels off and adding to the fermentation vessel? There was some time in the microwave, and it looked like you soaked them in some liquid prior to transferring. Assuming this was to sanitize the fruit so you didn't introduce any bacteria into the fermentation, but could you give some more details including how long you microwaved them and what/if you soaked them in?

I've read u need to soak in vodka for up to 24 h before adding to vessel. The microwave, I'm not sure why, only to kill more bacteria??

If they were added in last 10 minutes of boil, the boil should have been adequate to sanitize.

Really enjoying your channel. Nice work! How long does the fruit need to be microwaved (to sanitize, I assume?) and in your opinion is it worth the hassle to add the fruit, or just go with the rind only?

Thanks. We were winging it with the fruit sanitation. I think we gave it maybe 30 seconds. Opinion was divided on if the fruit added anything over just using the rind.

In the end there was not a lot of difference between the two although my preference was for the beer with the whole fruit added.

Did you sterilize those oranges in the microwave oven? What is that little torch good for when you are skinning the orange?

The torch was because oranges have a flammable oil contained in their rind (its also a solvent, spray orange oil on q balloon and it'll pop) The flame was so you could see small bits of oil igniting

The flame was for the possible wax on the oranges? I've been experimenting with oranges - making a tincture and next time, the peels of 6 oranges. I just remove the pith with a special knife, so my peels are thick. I thought they would yield more flavor adding them to the boil at 10 minutes.

Actually the flame was just so we could capture some cool sparks from the juice flying out the peel. Haha.

From a bartender technique called "flaming" an orange. Works best with a long piece of orange peel. Hold the peel up to the flame then squeeze it like you are folding it in half. It will spray the flame with orange oil and cause small burst of flames. It doesn't really work that well with zesting as you saw in the video. 👍🍻

Just brewed this in a 5 gallon batch yesterday. Seems like I could have toned back the hop additions I think I got about 32-35 ibu which for this style seemed a tad high. I’ll post back in a month and let you know how it taste. Was yours bitter or did it blend well?
