This week, we're experimenting with a brewer currently unlike any other on the market; Cuptimo.
We have used many different brewers over the years, however, the Cuptimo is certainly not your average brewer. Whilst devices such as AeroPress utilise pressure to enable the brewer to expel the brew liquid after the required contact time, the Cuptimo uses pressure built between the brewer and the vessel to drain the bed.
In this video we discuss the potential uses for this brewer and provide our initial thoughts.

Hey, so I’ve had one for a few months. I’m brewing quite differently to you with one of my recipes. I’m grinding Turkish fine, 18g of coffee, 80g bloom, loads of agitation to ensure everything is fully saturated sort of up down and left right rather than in circles using a melodrip stirrer / chopstick then at 1:30 pouring to a total 220g in the brewer but with a melodrip. After that and shaking the brewer slightly front to back and left to right- I’ve found this helps loads with a flat bed / consistency in the draw down. Obviously press down slightly to ensure it’s dealing and then pump to drain starts at 4 minutes. I’ve been hitting pretty crazy high extractions 25%+ and diluting to 324g- with the right lighter roast and less fermenty coffees this has been phenomenal.

I used 18g coffee at 17 clicks (Comandante C40) to 250g water at 96°C, poured for 30s, then stirred for 30s, then started pumping and got a brewing time of 2:00 for my first brew. The body was strong, and the mouthfeel is simmilar to an Aeropress where you press with more force, like a 20-30s plunge. I got a TDS of 1.70% & 25.07% Ext. Yield with VST filters & 1.75% TDS & ext. yield of 25.82% without them, measuring it as immersion brew. So I could go up a bit with the grind. I did another brew with the Cuptimo, using 15g Beans (22 Comandante clicks) to 210g Water (86°C) and I started the draw-down/pumping phase at 0:45, ending with a brew time of 1:30. This time I got a TDS of 1.25% and 18.57% ext. yield. The cup got sweeter and more lively than those cups I brewed before, also the mouthfeel is more simmilar to a V60 pour over than that of a fast plunged Aeropress. I think for Comandante I prefer extraction yields from 19-21%, with a well anligned flat burr grinder which produces a more unimodal grind with less fines it should be possible to achieve good cups with higher extraction yields.

Even my irritating coffee snob hipster household mate is impressed. We spend cups and cups comparing his V60 to my Cuptimo, and I much prefer the less bitter aftertaste from Cuptimo. A good coffee gadget.

Nice to see some new ideas/products at this time. For the brew method using air pressure maybe we don't need that much water to go through all the coffee ground. Maybe we can consider pre bypass via adding some hot water in the cup before the brew (I never like post bypass for some reason) or reduce the waiting time and pump a little bit harder like the turbo shot.

It might produce bitter coffee. Jonathan Gagné hypothesized that the bitter compounds in coffee might be similar to other fruits' bitter compounds, polyphenols, which are larger than acidic compounds, and might stick to the grinds with a static force as fines do, in which case they might stay in place in immersion brews if not much force in the flow - for a long steep Aeropress, he recommends a very light push of over a minute so as not to knock those bitter compounds free. If he is right, the high force from the vacuum of this dripper might dislodge more of those bitter compounds, doing the opposite.

Yea he is wrong. The way I do things, Cuptimo produces noticeably less bitter cups than with V60.

wait... I think this brewer is quite similar to the Büchner funnel used in chemisty, never thought coffee can be made in this fashion.
