But maybe if you can’t find the Peruvian, the Mexican can work. We don’t use jalapeños also. Some of the famous chilis in Perú are the Panca (dry and red ají or chili) the Amarillo(yellow) the we use it in everything, and it has a delicious flavor, “ají Limo” The best for make ceviche and Rocoto the most hot chili in the world. 😊

I made peruvian chicken without the chili and chipotle chili powder. Next time I will add the chili and chipotle chili powder. Let you know the result soon. By the way you look great. 🥰
The food looks good, but this is not Peruvian Roasted Chicken or at least it is not authentic. This dish requires aji amarillo and/or Huacatay. Those 2 ingredients give this dish that distinctive "Peruvian flavor". I am sure it taste good, but without those ingredients it is just roasted chicken.
Hi there, I live in a very small town in Quebec, Canada, where on most days can't even find a jalapeño and during covid forget about it.lol Very sad. The closest I can come to is adding a can of chipotle peppers in adobe sauce to the marinade. It is still super yummy with that green sauce.
