I just figured out how to quickly roast butternut squash and onion to use as toppers on my salad. The squash was precut into tiny cubes, about 3/8 inch all sides. It is found in the refrigerated part of produce department. I put them in my waffle maker for about two to three minutes. Ditto for small onion slices. As long as the veg is cut rather small, it does not need to be softened in the microwave. I built the rest of the salad while the vegetables roasted. No oil needed.

Overnight oats are wonderful and super easy to meal prep for the week. The flavor options are endless too. I use them to prevent “I’m running late, I’ll just pick something up on the way” decisions. I store mine in mason jars and just pop the jar in the microwave for 30-45 seconds, put the lid back on and head to work. Super easy and super cheap compared to eating out options. They will fill you up too. So good.
