"Crazy Caterpillars" is a great game for elementary students to work on hand-eye coordination, using a short-handled implement, and creativity.

How long did you cut your Pool Noodles down to? I cut mine down from the 48" I bought them at, to about 35", but yours looked about 26/27". I was also thinking about doing this with Paddles, but then on Scooters. Maybe I'll try both in one class.
