Curd or Dahi is one of the most cherished dairy products by us Indians. But which curd do you use? Amul, Mother dairy, from a regional brand or from the local dairy? Basically, which is the best curd in the Indian market? Let’s find out.

Curd not only amplifies the taste of any meal but also being rich in calcium, probiotics and protein, it is among the top strength giving foods on the planet. But is it true for the packaged curd that we generally buy? To find out the best curd in India, I have thoroughly researched about all the options available and have categorised them into 4 categories.

From last 50 years , we have never bought milk , curd etc milkmade product bcoz we've kept a cow , 2 are sahival & 3 are desi ❤ we didn't face any problem ! And yeah I've a joint family 19 member in my family ( father + 2 uncle + 2 Aunty + 3 sister + 5 brother including cosuins + 2 grandmothers + 2 grandfathers )

After starting using A2 milk, I have been setting curd on my own! I can confirm that on days whenever I use the active culture from the packaged curd, I do sometimes see it isn't well set but that rarely ever happens while setting curd using culture from curd I had previously set. I want to add one more thing in your information is that these local venders uses less fat milk and add cornstarch to make curd thick and we'll settled. Because it gives them a lot of profit as they sell ghee or cream separately and skimmed milk in the form of curd.

Sir there are few points which you have to study well 1. In industrial dahi preparation the milk solid is milk powder which is use to maintain the snf of the milk which use to prepare dahi 2. In industry dahi making there are few steps additional than the traditional dahi making like pasteurize the dahi milk, standardisation of milk than preheat, incubating etc. 3. Incubation,proper standardisation and culture addition of proper quantity this gives same consistency to industrial milk every time 4. The 15 days shelf life is due to pasteurisation of milk and proper sterile packaging of curd. 5. Finally sir local dahi might be made in unhygienic environment or utensils.

Again you spreading good content but there is tiny mistake that you said the milk used for preparation of dahi is pasteurize at 70 degree for 30 min that is completely wrong, in dairy industry the milk is used for preparation of dahi is pasteurize at 90 degree for 10 min and incase of pasteurization of milk is done by two methods that is batch(LTLT) and Continuous (HTST).So Overall your content is good.

10 minutes? 90 C? No way that is the right amount of time and temp for pasteurization, unless this is done intentionally to denature the protein for a very long time. Pasteurization we are talking just 15 seconds, not 10 minutes. And minimum is just 72 C.

The one most important concern that is completely looked over in this video is hygiene maintained by these local dairies.. there are n number food poisoning cases due to stale, unhygienic milk products in India purchased from local dairies. We have no problem in buying curd made from desi cow milk as far as it doesn't risk our lives.. Indian food authorities fail to ensure that food sold in local markets are safe for consumption. Milk products are offered to small kids especially. Its very important that we make sure that these products are safe.

Fantastic video brother. I'd like to mention that you can make curd without heating up the milk. I personally leave raw milk in room temperature for 36-48 hours until it sets. I've eaten this "raw curd" for 2.5 years without any problems whatsoever. You seem to be well aware of the effects of pasteurization. I can personally tell you that after researching the topic very thoroughly, I've found that high quality raw milk never makes anyone sick.

Hello Vivek, thanks for the very informative video. I have two questions regarding this. One, I live in Germany, with difficulty I found a farmer who is selling raw cow milk and these cows are not injected with hormones. But they are most probably A1. He doesn’t know the difference, but they are huge really big cows. I don’t think they have Desi A2 cows or buffaloes in Germany. So is it ok if I use that milk? It has so much fat and the Dahi I set with that milk is so yumm. Second question concerns my conscience. It is a common practice that calves are separated from their mothers under the premise that they over drink the milk and get sick. I don’t know how far this is true but I think cows don’t need humans to teach their calves when to stop drinking. Am sure they have their own system to regulate the calves. So I find it very disturbing to see that calves are sitting far away and screaming for their mothers. It is emotional abuse. I don’t feel good consuming that milk. What is your perspective on this?

i have the same question. I dont have a dairy farm nearby so i dont have access to full fat milk. The max is 3.5% fat which is not good for curdling. In addition the temperatures are mostly under20 degree celsuis. How can we still get to the process of making curd?

@@rocksneha059 I usually set the oven to 50 degrees Celsius, turn it off and leave the bowl in the oven in that heat. That helps. I also add one dry red Mirchi in it, that help too. Keep the milk warm enough. If you have access to Kefir (type of yogurt) use that as starter.

Pasteurization is pretty much an essential process these days. It is better to compromise on those Vitamins and consume them from another source than get cholera, typhoid or dysentery etc by consuming raw milk which might be contaminated. In fact dont we boil milk before consuming it at home too?

Milk solids mean milk powder. It can be low fat or full fat depending on recipe.

2:40 here to point out about milk solids and the process of making any packaged milk/curd etc. The process of making packaged milk/ curd is vastly different from what you would have thought. Firstly after the gathering raw milk, all milk is converted into milk solids. This process destroys enzymes and various vital nutrients. Then these milk solids are sent to different plants where milk/ curd is made. for example if you make standard milk, a specific proportion of milk solid is added with sugar, water and lab synthesized nutrients. This will give you standard milk. Similarly, the extra cream variant may contain more milk solids than the standard one, and is processed in different plant. Curd is made in a similar fashion but also adds lab culture in different plant. This is the general process of making different milk products cause this not only makes repackaging and distribution cheaper and easier but also maintains the same taste standard across the batch.

Thank you for making this video. Request you to kindly make a complete video on Greek yougurt. I found by Google searching that it is made from a different starter, that is lactobacillus bugaricus and people with lactose intolerance have no problem with it, though the flaovoured variant are of no use. It is very easy to make curd at home, Buy any brand curd. Boil 500gm tond or full cream milk, let it cool down but still warm, put two tea spoon of curd in it. And leave it untouched over night then in the morning put it in the fridge to cool it down. In winter put a warm milk container under cloth wraps to prevent it from losing its warmness too quickly.

I have been using A2 milk and make curd at home. It no doubt is tasty but also find acidity and stomach issues have reduced a lot. If sometime curd for setting curd is not available at home and I use packaged curd the quality of curd is not good and it takes 2-3 days to get to normal curd

Just have one cow. It is worth it. Any normal cow gives milk around ~7 to 8 liters liters of milk daily which is sufficient for the dairy needs of two families.

Hi, Vivek. I'd request you to please make a new video on Hair Wax as Menganic Hair Wax is not available on web's anymore and Kraves Hair Wax is only available in 100g. Plus it does require shampoo to get it completely removed from the hair. Therefore, can you recommend new Hair Waxs for daily or 4-5 times in a week. And I hope this comment reaches you as I was constantly searching for a natural hair wax, but I couldn't find one.

some people are commenting here for ENJOYING life with all packaged food items available in the market. To them 👇 life is good with such low grade food items till the point you visit a hospital with major illness and then you are not allowed anymore to enjoy these cheap products (bp, diabetes, kidney failure, heart attack, ulcer, gall bladder removal, etc. ). So what Vivek is saying is for long term enjoyment and not sasta enjoyment!
