泰式炒河粉
Pad Thai

泰式炒河粉
材料:
河粉一個
雞蛋一隻
鳳尾蝦仁6隻
蝦皮30克
銀芽半斤
麻辣花生10克(壓碎)
芫荽碎適量
蔥段適量
蒜蓉一湯匙
乾蔥頭(切碎)一湯匙
檸檬半個
辣椒仔一隻
處理:
1. 銀芽,清水浸。
2. 河粉,清水浸一小時以上,至完全軟身。
3. 鳳尾蝦,清水解凍,清除內臟,洗乾淨,擎乾水,廚紙索乾。
4. 預備醬汁:
a. 泰式辣醬一湯匙
b. 茄汁半湯匙
c. 辣椒醬適量
d. 魚露半湯匙
e. 生抽半湯匙
f. 糖2茶匙
g. 胡椒粉適量
加入清水50毫升,攪勻。
烹調:
1. 大火在鑊內燒熱油一湯匙。
2. 加入乾蔥頭及蒜蓉,爆香。
3. 加入鳳尾蝦,煎至金黃色。
4. 加入雞蛋,攪勻。
5. 加入河粉,炒勻。
6. 加入適量水分,炒勻。
7. 加入適量醬汁,炒勻。
8. 轉慢火,加入一半的芫荽及蔥,炒勻。
9. 加入一半的蝦皮及一半的花生。
10. 加入適量的銀芽,炒勻。
11. 完成,上碟。
12. 灑上餘下的芫荽碎、蔥段及辣椒仔。
13. 揸出少許檸檬汁在河粉上。
14. 放1/4個檸檬在碟邊。
15. 灑上蝦皮。
16. 在河粉的中間及側邊,灑上花生碎。
17. 可享用。
Pad Thai
Ingredients:
Flat rice noodles 1 No.
Egg 1 No.
Pheonix-tailed prawns 6 Nos.
Shrimp bran 30g
Silver sprouts 0.5 catty
Spicy peanuts 10g (well chopped)
Coriander cubes appropriate amount
Green onion (in lengths) appropriate amount
Garlic sauce 1 tbsp
Shallots (chopped) 1 tbsp
Lemon half No.
Chili 1 No.
Preparation:
1. The sprouts, soak in tap water.
2. The noodles, soak in tap water for an hour or more, until they are totally soft.
3. The prawns, defrost in tap water. Remove intestines. Rinse thoroughly. Drain. Dry with kitchen towels.
4. Prepare sauce:
a. Thai chili sauce 1 tbsp
b. Tomato ketchup 0.5 tbsp
c. Chili sauce appropriate amount
d. Fish sauce 0.5 tbsp
e. Light soya sauce 0.5 tbsp
f. Sugar 2 tsp
g. Pepper appropriate amount
Add in 50ml of water, mix well.
Steps:
1. Heat up 1 tbsp of oil at high flame in wok.
2. Add in shallots and garlic sauce, fry well.
3. Add in the prawns, fry until they turn into golden yellow.
4. Add in eggs, stir well.
5. Add in the noodles, fry well.
6. Add in appropriate amount of water, fry well.
7. Add in appropriate amount of the sauce, fry well.
8. Turn to low flame, add in half of the coriander and green onion, fry well.
9. Add in half of the bran and peanuts.
10. Add in appropriate amount of the sprouts, fry well.
11. Finish. Put on plate.
12. Put coriander cubes, green onion (in lengths) and chili on top.
13. Squeeze little lemon juice on top of the noodles.
14. Put 1/4 of the lemon at the edge of plate.
15. Put shrimp bran on top.
16. On top and side of the noodles, put peanut crumbs on top.
17. Serve.
