You know what makes you the best teacher? You realise that not everyone has access to everything. You know that not everyone likes everything. And instead of shaming or admonishing people for varying your recipes, you give them tacit permission to do so. Everything that is negotiable, you say, "If you don't like it, leave it out", or "I put this much, but it's to your taste". I think that's such a powerful message to put out there: some things are negotiable, some things are written in stone, but at the end of the day, it's to /your/ taste.

If you freeze your block of tofu for a few days and then let thaw not so wet but it looks and feels much more like meat it almost shreds like chicken would.

I like the diverse type of dishes you cook, I was under the impression at first that this was an all southern cooking channel, nothing wrong that at all but it's a little bit everything. Everything is explained in simple terms for people like me, who aren't the most skilled in the kitchen.

Sweet Sara, I have switched to all silicone utensils on my non stick cookware. It saves them from scratches and helps keep the finish like new. Spoons, tongs, spatulas.

I also add powdered shrimp, tamarind paste and lime juice !!

I recomend coating the tofu in cornstarch, it makes it more crispy and chicken texture like.

When you thought the tofu was fcking butter

After I’ve pressed the tofu I marinate it over night and then I pat it dry with paper towel and then I toss them in cornflour Pat off the excess and add them to a very high heat to get them nice and crispy tofu loves a really hot pan and I just add it to my sauce with veg beautiful

i have always wanted to try to make this and finally looks like a recipe I could follow.

It’s nice to see someone who enjoys cooking and nice to see someone who shares their recipes. Also great she tells people how to substitute. Only thing that I found wrong with the video is that she was using a metal spatula with a Teflon pan that’s not a good idea it will ruin the pan and possibly cause the Teflon to eventually come off in the food
