Ingredients:
1.5 kg mutton, sliced
3 large onions, sliced
1 head of garlic
2" piece of ginger, crushed
1/2 cup oil
1 tbsp coriander powder
1 tsp turmeric powder
1 tsp red chili flakes
1 tsp garam masala powder
3 cloves
1 cinnamon stick
2 kg spinach, boiled, blanched, and crushed
8-10 green chilies, crushed
Salt to taste
1 cup water
1/2 cup butter or ghee
Procedure:
Begin by boiling the spinach for 5 minutes, then drain and chop it along with the green chilies in a chopper to create a smooth paste. Set it aside.
In a pressure cooker, add the sliced onions, garlic, ginger, tomatoes, and all the spices including coriander powder, turmeric powder, red chili flakes, garam masala powder, cloves, and cinnamon stick.
Add 1 cup of water and pressure cook for 10 minutes. Afterward, remove the peel from the tomatoes and transfer the mixture into a large bowl.
Heat a pan on high heat and add the mixture from the pressure cooker. Cook until all the water has evaporated and oil starts to separate.
Once the water has evaporated, add 1/2 cup of oil to the mutton mixture and fry for 4 to 5 minutes, until the mutton is cooked through.
Now, incorporate the blanched and chopped spinach along with the green chili paste into the cooked mutton curry. Mix well and cook for an additional 10 minutes until the water evaporates and the oil floats on the surface.
For added richness, add 1/2 cup of butter or ghee to the curry. Mix well and let it simmer for 2 to 3 minutes.
And there you have it! Your delicious Palak Ghost (Spinach Lamb Curry) is ready to be served.
