That's very interesting. I don't think there's any one plant in the world that's more versatile than the coconut palm.

Thanks, it is very delicious. You can use both for sweet and savory dishes. It is low glycemic natural sweetener. You may have to experience with it but in my kitchen I use the same amount of brown or palm sugar interchangeably. Now you can find in natural market in powder form and liquid form. Have fun cooking them.

With 1 cup for each coconut tree a day is too little. In Tuvalu, a good coconut tree can produce 3 gallons a day of sap. How much sap you get out of a single tree depends on the tree and the skill of the cutter (farmer). Some trees are better in producing sap than others; an average tree should produce 0.5 to 0.75 gallon a day. In Tuvalu, we cut and collect sap twice a day, one in the morning (6-8am) and in the afternoon (4-6pm).

its called " Gula kelapa Merah " from Coconut Tree... and "Gula Aren Merah" from Gomuti Palm .. this two kind sugar palm dominate in indonesia

It is technically wrong to call this nectar. It is sap, just like maple sap us, only that the sap comes from the flower stalks of the coconut! Nectar is the sugar containing liquid of a mature flower.

Interesting to see how it's done. However, the plastic is not a good thing to be used in that process.

There are the same. Coconut palm sugar or coconut sugar! But there are two kinds of palm sugar from two types of palm tree: one is coconut palm and one is toddy palm. From coconut palm such as video are in central Thailand and Vietnam where as the toddy palm is cover Cambodia, southern Thailand, Burma, Malaysia and Indonesia.

Hi Pranee ! I'd love to buy some coconut palm sugar from a Vietnamese or a Thai food store to try in some dishes. I live in Chicago, we have lots of great specialty stores here and many are small and family owned businesses. It looks like it's really delicious ! LOL. By the way your skin is very pretty and so is your smile ! I love your accent ! Thanks for the video, it was really enjoyable and informative.

I love palm sugar. In my opinion it has a better flavor than cane sugar, and has a low glycemic effect on the human body.

I keep palm sugar airtight in a jar or plastic bag. Use sharp knife to shave it like you would do to chocolate bar. If it is need in large portion to make Phad Thai sauce, I just place the whole disc (1/4 cup) into the pot with other liquid ingredient, simmer it. Stir a few times, It will melt in 10 minutes.

i must ask. i have read a rumor that, if your making coconut sugar from the tree. Then the palm tree no longer can make coconuts again? or can it? Can you make the palm tree produce coconuts again after making sugars from it?
@ILoveThaiCooking
@ILoveThaiCooking 8 лет назад
+Andre R it is true if we keep cutting the flowers tip for the nectar, it won't get a chance to become a coconut. However, if the farmer decide to stop cutting them, the next time around the new flowers can then become coconut. I hope I answer your question. Thank you.

you can shave them with knife like you would with chocolate, it will be soft ready to mix in salad dressing. Large quantity can dissolve quickly when cook with liquid.
