Makes around 8 cups
Ingredients:
Bubble tea Pearls
Water (for boiling pearls)
120g (¾ cup) bubble tea pearls
120g (½ cup) water
100g (½ cup) brown sugar
Boil a large pot of water. Add pearls. When they float, turn down the heat. Cover and simmer for 40 minutes.
Turn off heat and rest for 30 minutes.
Drain and rinse pearls with cold water.
In another bowl, combine water and brown sugar. Microwave 30 seconds and stir. Repeat process until sugar is completely dissolved.
Pour into cooked tapioca pearls, set aside at room temperature for a few hours. The pearls will absorb some liquid over time. Do not refrigerate your pearls or they will turn hard.
Pandan Layer
6 pandan leaves
240g (1 cup) unsweetened soy milk
240g (1 cup) water
4g agar strips, soaked 30 minutes (or 1 ⅓ tsp. agar powder)
1 can (400mL) coconut milk
100g (⅓ cup) maple syrup
If using agar strips, soak dry agar in water for 30 minutes. Squeeze out excess water.
Remove white parts from pandan leaves to remove bitterness. Cut the rest into chunks.
Blend cut pandan leaves and soy milk. Strain mixture, set aside.
In a medium pot, boil water. Add soaked agar (or agar powder) and stir until dissolved. Add strained pandan milk, coconut milk and maple syrup. Mix until everything is smooth, do not boil.
Pour into cups. Chill 3 hours or until firm.
Coconut Layer
280g (1 cup + 2 ⅔ tbsp.) water
3g agar strips, soaked 30 minutes (or 1 tsp. agar powder)
240g (1 cup) coconut milk
80g (¼ cup) maple syrup
5g (1 tsp.) vanilla (optional)
If using agar strips, soak dry agar in water for 30 minutes. Squeeze out excess water.
Boil water, add soaked agar (or agar powder) and keep on medium heat until fully dissolved.
Add coconut milk and maple syrup. Stir until combined, but don’t boil.
Turn off heat, add vanilla if you like.
Pour on top of the chilled pandan layer. Chill 2-3 hours or until firm.
Spoon room temperature pearls on top of the chilled coconut layer. Serve immediately.
