I had the same doubt. First I tried with adding yogurt while heating but that failed. Then tried again by adding yogurt after turning off the flame and it worked. Within 3-4 water got separated.

I saw one episode of lost recipes on epic. Which there was a sweet recipe of something like Gulab jamun that had paneer. They said that paneer was in India. This was from Karnataka if my memory serves right.
