Pani puri & Sev puri
Golgappa/Puchka
Mouth watering Golgappa this popular street food is world famous crispy puri stuffed with potato moong sprout mixture & dipped in chilled sour, sweet & spicy mint & coriander flavored water, once you start having this you just go on eating
FOR GEEN PANI WATER
-Handful fresh coriander leaves
-Handful fresh mint leaves
-4” ginger
-5 hot green chillies
-1 glass cold water
-1/2 tsp cumin
-1/2 tsp black salt
-1/4 tsp salt
-1.5 tsp readymade pani puri masala
-1 tsp sugar
-1 mine juice
-Wash and add to a grinder Coriander leaves, mint leaves, ginger, green chillies add very little water blend to a smooth paste
-Strain add 1 hall cold water, add cumin powder, salt, black salt, sugar, lime juice, pani puri masala
Mix well store in a tiffin/glass container and refrigerate to chill
SWEET/SOUR/SPICY CHUTNEY
-5 dates (remove seeds)
-4 jaggery
-2 lemon size tamarind (soaked)
-Add together 1 cup water, Jaggery, dates, tamarind bring it to a boiled for 5-6 minutes
-Turn off the flame let it cool, add to a chutney grinder blend to a
Smooth paste & strain, can add little water while straining
-1/4 tsp chilli powder, pinch salt
-Mix all together store & refrigerate
-BOIL MOONG & POTATOES
-3 boiled potatoes
-1 cup green moong soaked for overnight and boiled
-Mash potato add boiled moong sprouts pinch salt, pinch black pepper, pinch chillli powder
-Mix and keep it aside
-MIX THE GREEN WATER
-1 cup green pain puri water, 5 ice cubes, 2 tbsp sweet & spicy chutney mix and adjust taste according to your taste buds.
(Less it more spicy/sweet)
ASSEMBLING PANI PURI
-Take each Puri & gently crack and make a large hole on its top-middle side with a spoon or your index finger or thumb
-Stuff potato moong mixture.
-Dip each puri in water and enjoy
FLAT SEV PURI/PAPDI
Topped up with flavorful condiments Spicy, sweet, tangy, savory, salty, sev crunchy flavors
-Potato & Moong mixture
-1 onion finely chopped
-2 red firm tomatoes finely chopped
-handful fresh coriander leaves finely chopped
-mix powder-1 tsp cumin, 1/4 tsp salt, 1/4 tsp black salt,1/5 tsp black salt, and 1/2 tsp chaat masala mix well set aside
-1 bowl fine Sev
-Arrange the flat puri or Papi on a plate
-Top up with potato & moong mixture
-Sprinkle chopped onion
-Sprinkle chopped tomatoes
-Touch of spicy green chutney
-Touch of sweet, sour, spicy chutney
-Sprinkle mix powder
-Sprinkle generous amount of fine sev
-Squeeze lime juice
-Garnish with coriander leaves
-Enjoy!
