I am so ready for this challenge...even if my kitchen isn't! This week I'm working on clearing out the fresh items leftover from last week, stocking snacks to prevent (someone I know!) from running out to grab something, and enjoying some childhood food memories!

your jar opener, will pop the suction on your store bought artichoke jars, just pop pressure and then twist hands! saves the grip of your hands from harming your hand muscles!

Oh Carter I was hoping you'd put a video out, so what joy when I saw that you did. Yay! I'm joining you in this pantry challenge, and like you, my freezers are on my to tackle list. If anything, just to clean them up and get them better organized. And I'm gluten free and low carb, so those muffins look amazing. Definitely going to keep your recipe and make them. Thanks so much as always for the video. And PS. I love when you asked David if he wanted a muffin😂! Men, lol, always begging for food. Ha ha!

I love the pantry challenge, and it has really motivated me! Your videos are inspiring, and have really helped me improve my health. I wanted to share a little bit of my story, and hopefully inspire others along a new path. I have four auto immune diseases, lupus, RA, neurosarcoidosis and thyroid disease. For 30 years I suffered and struggled on western protocol and treatment, a miserable existence. In 2019, I moved back to Jacksonville, after Covid, I decided to totally give up Western medicine, in 2022 I started transitioning to a Whole Foods kitchen, with as little process food as possible. Your recipes, have helped me move that to the next level, with items like coconut milk, buttered flavored coconut oil, honey and molasses... I have never felt better in my life, and I can't believe that for 30 years all I needed was better food, and less western medicine. 🙏🏼🙏🏼🙏🏼 grateful

Yep. I won't stop preserving during the challenge...just not stuff I will eat the next couple months. It is good to keep cycling through the older stuff.

Idea for David’s snacks I had just a couple of cups of Taco Soup left and I decided to throw it into the blender--topped with some sour cream and cheese, then used Frito Scoops. It was so good. If I’d had an avocado!!!

Tip for freezing peas (ours were purple hulls). I was having a serious health crisis when the peas came in, an old (90) lady told me - Do Not Wash the peas when they come from the field just Shell them. Put them into a white cotton pillowcase, then that goes into a black plastic trash bag. I did just as told and I used from that bag, getting just the amount I needed then washed and cooked them. They lasted 3yrs and every cooking tasted like fresh from the garden. I tell the truth and I lie not.

Carter, I find that the freezer is the most difficult to organize and keep organized. There was one suggestion on a different RU-vid channel that each type of protein be put in a different color bag… I think that’s my next endeavor.. I also lock my freezer for fear it will get left open.. ❤

Good thought, Vicki. Believe it or not, each shelf has labeled baskets for different proteins. I just can't find any of them anymore because they're covered up in veggies. So much work to do...!

My pantry doesnt look like this YET!! but it will and just since I started canning last month.. its already full enough for us to eat at LEAST a month from without going to the store! AND I want to thank you personally.. My husband HATES soup.. but he LOVES your chicken corn chowder ( although I made it with smoked turkey off our smoker ) and my shelves now have quite a few jars of it !!

I believe with the lettuce if you slam it on the counter on the cut stalk part it not only loosens up the leaves but cuts them from the stem. Sometimes it takes a few slams.

I remember that slamming trick now. I did cut out the stem, but perhaps the slamming really loosens things up. I'll try that next time.

This will be my first pantry challenge my husband isn't thrilled with the idea of not going to the store at all. So I make the meal plan for 2 weeks and only try to use meals that we can make from the pantry. So I will still go to the store to get milk, the bread he likes, and a few other little things to show I went to the store. He just doesn't want the pantry to go empty.

Sounds like you have a good plan. I do understand not wanting to fully deplete the pantry, but this is an excellent tool for 1) making sure everything gets used, and 2) rotating inventory. That being said, if my husband really wants something from the store, that's ok with me. You and I chose to accept the challenge. It's ok if they don't. We're still making great progress.

Remove the core. Submerge in ice water core side up a few minutes. It should peel easily. Dry leaves or place in fridge with a few paper towels to absorb the water. Next time you make grilled cheese use a spread of mayonnaise instead of butter or ghee. Game changer. I would dive into the artichoke dip also. Looked delicious well everything did. So if your friend brings eggs that's not going to the store? Well ask her for shallots and onion powder.. ha ha Have a great week.

I did cut out the core, but I forgot about the water part. Mayo instead of ghee! Interesting. I'll try that. Maybe I'll just go shopping at Christine's!

Great video! The struggle with the lettuce, though ...😂 I feel your pain. I have made lettuce wraps a couple of times and found it was a little easier if I removed the core first. I noticed that you have a Pry-A-Lid (that's what mine is called). Not only does it work great opening your canning jars, but also for those grocery store jars, like that jar of artichokes! No more muttering under your breath (or out loud, in my case 😮😊) and banging on the counter, etc. I don't have the hand strength I used to and discovered this by accident one day when I *really wanted some garlic/jalapeno- stuffed olives.

The way I separate lettuce is to remove the core and then hold the lettuce cored side up under running water. The water will run through all the gaps in the lettuce separating each leaf.

Hello from central Oklahoma your pantry is Beautiful! I am new and just beginning in the canning adventure, due to trauma when I was little while my grandma was canning....so, I am happy to say I have pressure canned some beans, broth -25 quarts of broth Chicken and Turkey, waiting on beef bones for beef broth. I just did 13 pints of apple butter, and 13 apple jelly. I am excited to find your page! :).

If you take your canning jar lid opener and use it on a commercially canned jar until you hear the seal release it’s easier to open the jar. You can also use a spoon under the lid to break the seal. 😊

Next time, after you core your lettuce, fill the cavity with water, and then turn it over into a colander to drain. The outer leaves should slip right off. The young leaves on the inside likely won't peel because they are too tight. AND- get a pampered chef Nylon Knife to cut your lettuce. It won't brown using this type of knife. Also, while you are there- grab yourself a jar opener! BEST thing I have ever bought! 😄

I usually slam the lettuce to loosen the stem and then cut it in quarters. The inside layers I tear to include in salad and the outside layers I peel for “buns”

My pantry challenge is to not go out to eat for the month of January. I can go to the store but I will be cooking at home for the month. Which will be a real challenge for me because I eat out almost every day. Maybe next year I will have enough of a stock pile to try the not going to the store for the month.

I always make a slit through the thickest part of each leaf then pull from there. Gets you decent sized pieces of lettuce. I will be ordering the bread

Wow! A lot of those meals hit the spot with me! I'd love your tomato soup recipe! I will also be canning up more bacon as that is a fave of mine. Did you use the whole jar of those artichokes? I have a few that I'm sure have hit their date. I'm having trouble with Mayo as the ingredients are making me sick. I used to love Hellmans🥲 I tried my hand at making my own using avocado oil. It was ok just not the taste I loved. I also want to make those crackers. I found 2 bags of almond flour and flax seed and meal when I was cleaning the freezer! There again I used to purchase them but now they upset my stomach. I'm thinking it is all the soy oil they are using now! This week I tried something new and made chicken schwarma w saffron rice, hummus, naan and a garbanzo salad. Omg it was all so delicious! Used up items from the pantry the only substitution was sourcream for the Greek yogurt! Thank you for the inspiration! The naan was so easy to make, will do it again!

Hey, Connie! That's the cheater tomato soup I made in the tomato video earlier this year, basically just tomato paste and the watery tomato juice I pull out when roasting down the tomatoes.. If you add a bit of sugar (or allulose), it tastes much like Campbell's. Yes. I used the whole jar of artichokes. Have you tried the Chosen foods avo oil mayo? I was always a Hellman's girl, but I really like the Chosen. YOu had me at Chicken Shawarma! YUM!

I like your shelf system. Does it appear to support all your canned foods efficiently? If so could you please share where you found them and any other details you recall about them please? I need to replace mine and have learned some shelves don’t support the weight of canned foods as well as others. I would so appreciate any input you can offer. Thank you!

Hey, JC. I know water glassing is big in the homesteading community, but I have not done it. Until now, I have scrambled and frozen raw eggs for preservation. They work fine in baking, but I'm less thrilled with them when using them to make an egg dish. I have just gotten a freeze dryer, so I will be trying that method as well.

on your raw packed stew meat, the liquid levels are low. When you canned them, I assume you had headspace of liquid ~ 3/4 inch ? I have a hard time with raw packed meat liquid levels. Raw meat gives off liquid ? Did some of your liquid siphon off ?

Excellent question, Mike! Raw pack meat does not require liquid of any kind. This is the USDA recommendation. Fill your jars with raw meat to 1-1 1/4” headspace. The meat will make its own broth and will shrink a bit. Your post canning headspace may look low, depending on the meat you’re using, but that is absolutely normal. There should be no siphoning unless you’re trying to can something like fatty pork shoulder. Good to have you here. Ask questions any time!

I've wondered about Jimmy John's lettuce skills. About 50% of sandwiches come out beautiful and well put together and some end up a salad mess on the plate. So I wondered....is there a method or is it just depending on the lettuce head itself 🤔😄

I found you on utube today and love your channel. I watch you video on dry canning potatoes. I had no idea I could do this. I only have one question? How much water do you put in your canner when you canned your pints? I can alot, and have 2 pressure cookers, and just canned my chilli in open canner.

Peel the lettuce leaves starting from the crown end rather than the stem end.

I wonder if rolling the lettuce in the counter to help loosen the leaves a little would help. Just an idea. I've never tried it.

Is almond flour just ground up almonds? I have several bags of almonds in the pantry and I'd like to try the muffins.

Generally speaking, it's finely ground blanched almonds. If you have extra bags of plain almonds, I would give it a shot, especially in the flax muffins, where you won't notice the brown flecks of almond skins. Keep me posted!

I have a question my son in law made a bake spaghetti and I was wondering could any type of spaghetti ( already put together with noodles ) be canned 🤔🤔. Thank you😊😊 and I apologize for being off subject

Hey, Roxie. PENN State Extension Service says that the starch of the noodles interferes with heat transfer to the center of the jar. Although I've been known to bend (or break) the rules that don't make sense, I have no standing to argue with this one. However, I can't imagine that the end result of canned pasta would be good.

I use Allulose and a bit of molasses in place of brown sugar.

I saw those chicken meatballs (I think at Costco the last time I was there) and very nearly got them, but am trying to do the pantry challenge so I didn’t get them. Do you like them? I’ll get them when I go to Costco in a few months if you do. We are doing well at working down the pantry over here. We had BBQ pork sandwiches for dinner and some white chicken chili that I canned in November for lunch. We ran through all of the ugly chicken breast in the pantry, so I canned 8 pints of that this weekend. I guess, technically, more went in the pantry then came out. Whoopsie!

We do like the chicken meatballs. I think I used them in the cooking from the freezer video a couple weeks ago. Great with pesto and goat cheese. We haven't tried them with red sauce yet. Glad you're making progress there! It's ok to add things you run out of. Good to see you as always, Kari!

Allulose. It’s the non caloric sweetener I use. Feel free to use sugar or whatever you normally use in baking.
