Real Italian cooking uses some pasta water into the sauce to help thicken it. I'm sure it'll still be good, but there's a reason for using "the tears of the gods" or the salted water your pasta was cooking in. It's a must.
For some people like me and in some cultures, people like to eat their main course alongside their salad at the same time. One dish doesn't have to be fully eaten before they eat another dish.
