It takes a lot of attention to make each veggie tempura piece, I'm amazed he can charge that little for them (230 yen, less than US$2 nowadays). It's probably more effort than some restaurant chefs put into much pricier dishes with fancy ingredients, I'd bet. Perhaps it reflects how maximising revenue for minimum effort isn't the main priority for this man. I admire the pride and dedication of Japanese chefs like him.
I'm from America and I watch all these Asian Cooks this gentleman is the first chef who not only has great cooking skills the food looks great but here's the kicker he's the only ship I have ever seen who eats his own food live on camera the man's got class Bravo
Wow!! He's a hustler! As one other wrote, "high standards" and I agree!!!! LOVE that it's clean, quick and intimate. I wish he had seats for the customers to sit and relax, as they look like they are either heading to work or returning from work.
