Pasta with onions
4 portions
6-8 onions
salt pepper oil
chili pepper
rosemary
parmesan
pasta 350 g
Clean and slice 2 medium onions for each person.
Large frying pan, oil, chilli pepper and the sliced onion, which must be plenty.
Sauté over high heat for 15 minutes, stirring very often.
When the onion is browned and wilted, add half a glass of white wine and let it dry, salt, pepper, rosemary or parsley, a little water and cook for another 10 minutes.
In the meantime cook the pasta, the one you prefer.
Drain the still hard pasta and finish cooking in the pan by adding the pasta cooking water as needed.
at the end of cooking plenty of parmesan or pecorino cheese, and raw extra virgin olive oil.
