Pastry Recipe/ Lobster Tail Pastry Dessert / SFOGLIATELLE

I was always wondering how this pastry is made, but now, once I made it, I am started to get addicted to . I am making it for a first time, and I enjoyed it. Here is the recipe:
For the dough:
• 300 ml water room temperature
• 1 tsp salt
• 1/4 cup honey
Mix well then add
• 2 1/2 cups all purpose flour
Combine everything well into a firm dough.
Wrap it in plastic wrap an refrigerate for at least 3-4 hours, or overnight
While dough is in refrigerator, start making the Filling:
In the pan, on medium heat mix:
• 300 ml water and
• 200 grams sugar
Just before start boiling, add
• 100 grams semolina flour,
Immediately start mixing, until smooth, and let it cool down
Add:
• 1 1/2 block cream cheese
• orange zest
• 2 vanilla packs
• 2 eggs
• 1 tsp cinnamon
Combine everything well and refrigerate.
Remove the dough from the fridge, cut into 2 pieces, make one at the time, it’s easier that way
Using Pasta Roller, make dough sheets, as thin as possible, rolling the dough 2-3 times through the Roller.
( I suggest that while rolling the dough, sprinkle flour so doesn’t stick)
Roll the dough on rolling pan, ( again!!! Please sprinkle flour so doesn’t stick)
Start unrolling the dough sheet, roll back, but now you spread butter
Ready rolls should go in refrigerator for at least 2-3 hours, or freeze for 1/2 hour
Cut 1/2 inches circles, make cones, watch the video for better instructions, fill inside the cone with tbs filling, close the edge, place pastry on the pan with parchment paper.
Bake on 400 f for 20-22 minutes, until golden
Cool pastry first, before sprinkle sugar powder
I love this recipe! It’s extremely delicious, nice and crunchy, crispy, I have no words to explain 😋

1 vanilla pack replace it with 1 tbsp liquid vanilla extract 😊

Thanks. I took screen shots because I couldn’t find a button to just print the recipe😂 I am classically French trained as a chef but have been out of the business for a long time but do enjoy baking a lot. I have a friend who is a tremendous fan of sfogliatelle and I have been teasing him that I’ll make him these some day. I guess this is the some day as this is a very manageable method. Thanks ps. If there is a print button pls tell me where it is. 😂

I was looking for this recipe thank you for posting this 🙏🏻 But a query, just how much gms are the orange peels The exact amount of cream cheese? Vanilla? Can you please share the actual weight of ingredients.. would help me greatly thank you in advance 🙏🏻🙏🏻

Yes! You need 12 oz cream cheese and use orange peel from 1 medium size orange . Good luck! I love this recipe 😋Thank you

Nice recipe. It would be better if you either give all ingredients in Volume or Weight but please don't mix. 300ml water and 2 1/2 cups flour??? I prefer measuring my flour in Grams when mixing with ml of water.

All purpose flour

Usually Kind Arthur or any brand all purpose. For pastries, also i have good experience with using Pillsbury all purpose flour 😊

Just want to confirm 2.5 cups of flour to 1/4 cup honey+1.25 cups water? Your portions of flour seem more than 2.5 cups, judging on the cup portions you are pouring.

Pour flour one cup at the time, continue kneading,, make sure the dough it’s slightly firm, exactly what you see on the video . Could be more flour, because I used the water glass to measure . If you have little experience with making dough, you’ll get it, you’ll get it right. Those are my favorite desserts. Good luck and thank you for following me, 😊
