I was so inspired by GBBO that I wanted to try all the technical challenge recipes.
GBBO S06E02 - Biscuits - Paul Hollywood's Arlettes
Ingredients
For the dough:
----------------------
Bread flour - 60 grams/ 2¼ oz
Plain flour - 60 grams/ 2¼ oz
Salt - 1 teaspoon
Unsalted butter - 40 grams/ 1½ oz
Cold Water - 50 ml/ 2 fl oz
For the butter layer:
-----------------------------
Unsalted butter - 125 grams/ 4½ oz
Bread flour - 25 grams/ 1 oz
Plain flour - 25 grams/ 1 oz
For the filling:
--------------------
Granulated sugar - 50 grams/ 1¾ oz
Ground cinnamon - 2 teaspoons
Icing sugar, for dusting
Notes/Tips
1. To roll, the dough and butter layer should be at same temperature.
2. The first roll will be very sticky, flour generously.
3. Big granulated sugar is better to get that crunch rather than caster sugar.
4. It took me more time than mentioned in the recipe to get the golden brown color. So bake until it turns golden brown.

Impressive, if a bit fast to follow. Question, were one to wish to double the size -- say a good size dinner plate -- how might one adapt the recipe/technique to do that, please ?
