The stuff with the Koroks [little tree dudes with the backpacks] is referencing a community aspect called the Korok Space Program, which is probably the tamest thing players have done to them. The "five loaves" bit is a reference to one of the MANY item duplication glitches, which is especially useful during the final army right before Ganondorf. A lot of these dupe glitches got patched, but I don't think the devs patched all of them, last I checked. Everything else Link does is just typical speedrunner behavior, like wall clipping and exploitation of mechanics.
In TOTK Speedrunning, most of them play on the Vanilla version of the game. No patches at all. There are speedrun categories where it's attempted on later versions but all the skitz runs are done on v1.0
