Peach has always been my nemesis. Mead, Wine, Cider... nope. Nothing I ever made with peach came out as a brew I would want to drink. Thing is... I LOVE peaches! I eat them almost every day! But... can we ferment a mead made from peaches? We're not talking about extracts or juice here... REAL, FRESH PEACHES in a MEAD!
Whew... ok, I feel better now.
Ingredients:
3 lbs Wildflower Honey: amzn.to/3F0HH81

Quick correction: this is probably more like 14-15% total abv due to the peach juice diluting the batch which also explains how the yeast kicked back up!

But also I don't get how you got to those additional over 2% of ABV, if the yeast hypothetically ate up only 5 of those additional 21 points? Wouldn't that mean adding just those 5 points to the original 102, which is altogether 107 gravity points? 0.107 x 135 = 14.44%. That's without the dilution included. Edit: Sorry, commenting as I'm watching. Anyhow with those additional 8 points afterwards, that would've been 0.115 x 135 = 15.52%. Not 17%. Still quite above the stated tolerance tho and ultimately what's important is that it's good! Cheers!

The 2% had me confused as well, as those 5 points are more like 0.7%, hence the correction I take it. After the 5 points, there was another 8 point drop though, so I guess roughly 15.5% before the backsweetening 😉 Really like the videos, hope to get starting on some own brewing 😁

We backsweetened it then the measurement between where we sweetened it to and where it ended was calculated for the ABV %.@@alexlarsen6413

I'm confused by this as well. If the peaches added 0.021 and ended up dropping 0.005, it should have only gained 0.675% ABV bringing it to ~14.445%, right? I'm just checking my math here to make sure I understand this.

keep it the way it is please. The conversational rhythm of your videos is a big part of the charm of the videos and part of what brought me to your channel. It's like I'm hanging out with my buddies and they're walking me through what they did to make their mead. I watch a lot of different youtube presenters and I come back to yours every time because of that vibe.

Same here. You guys know I’m no stranger to making mead. I’m always on the lookout for recipes but I don’t just watch for those. The vibe, the tongue-in-cheek unscripted style, the banter, the humour and the rants do it for me. Derica’s celebration of her quirky and unique humour. re: the b-roll question. I started watching cuz I wanted to start brewing, and seeing the two of you going through the process was a helpful kick of "oh, I really *can* do this". Now I've got close to a year of brewing experience of my own and still watch to pick up ideas or techniques I haven't seen yet. Your own b-roll, when it's relevant like the bubbles and carbonation, worked fine for me. If it was too frequent a stream of other jokes or whatever it would start to feel like some of it's getting cut out or that I'm missing major steps like definitely happens with certain, say, cooking channels. It's sort of a confidence booster for a noob. For what that's worth.

Yes, having your own b-roll is good for those close up shots you can’t get in the normal view. Or even b-roll from another video is fine. This isn’t family guy.(silly voice)

Ironically one of my first good meads was a peach mead. I was worried the peach flavor wouldnt come forward so I just did ec-1118 and started it at 1.086 G and a pound of fresh peaches. Every ~10 days I just tasted it and if it wasn't peachy enough I racked it, added another lb of fresh peaches, and added another .5 lb of honey just to keep it active. After the 3rd rounds it was tasting super peachy so I pasturaized and back-sweetened. Came out perfect.

For new viewers: this video is perfect for both making a basic mead AND how to best use fruit in mead. There are other ways to do it, but this way I say you succeed in at least 99 times out of 100. A lot of good information.

Congratulations on your successful peach mead! I’ve actually made a few peach meads now using purée in conditioning, instead of whole fruit. It dilutes the mead & drops the abv (I typically add 10oz of purée to 120 oz traditional mead), but the flavor is quite nice, it’s cheaper than whole fruit & less messy.

I think the continued fermentation despite cold shock and stress might have something to do with the increased amount of yeast nutrient you started with.

My own peach wine ended up at 15.6% thanks to 71-B, and I had some peaches fermenting in primary. Didn't use as much peach as you two did. Only had five large peaches to cut up, but it's turned out pretty nice. A good mid-range peach flavor, not too strong or weak, and some light shortbread flavor from being left on the lees for *a year* or so. Yes, I said a year. Only thing keeping it from being peach cobbler is a tiny pinch of cinnamon. Congratulations on making a great peach mead. Milestone achieved.

1 of my favorite memories is when we were kids we would go camping in Sulphur, OK. We would go threw Stratford, OK, and my parents would get peach wine after they drank it we would get the bottle with the peach mush in the bottom and eat it (without them knowing) it was awesome for a 12-year-old. Aaa good times. L9ve the show keep it up!!!

Regarding the B Roll question - I love you guys just being you. Don't get me wrong, I love comedic interludes too, but from when I started watching it it was to get into brewing and as an informative piece. At the end of the day, if you want to put in more B Roll then do, I'm certainly not going to stop watching. And I will appreciate the extra footage / comedic interlude

B roll ++ When I add Fermaid O, I don't bother to mix it with water or stir it in at all; by the next day, it's all dissolved in there without any messing with it. I think it's better that way because the yeasties have some time to get at the nutrients rather than needing to get to it all at once. So glad you've conquered your nemesis! The chamomile cider tastes a lot like cider, but I'm not really tasting the chamomile. I think it's my perception and not the actuality, though. Will bottle some time this week.

I come from a background where my father brewed and made wine but I never really learned. I stumbled across y'all's channel a few weeks ago which has me trying to work the nerve up to commit to the rest of a setup to start making mead/cider myself (I have an unused ale 'kit' that gives me most of the hardware at least). Y'all's channel is very reminiscent of many PBS shows (which I'm sure you were raised on too). So I don't feel anything needs to change with the way you make your content. I appreciate y'all.

Something you might want to look into and try for tannins far as tea goes is Lipton makes a really good instant black tea with no added flavorings like lemon etc and no added sweetener. It makes a really good sweet tea which I use it for and hot tea. When you taste just the powder it has that pucker factor like I heard you describe tannin... I get it from Walmart and it comes in a makes 30 quarts size glass jar.

My peach wine and peach mead always goes bonkers. It's similar to banana wine in my estimation. I like using a combination of fresh peaches sliced with a mandolin and the cafeteria sized 6lb 8 oz cans of peaches in light syrup. I macerate in pectic enzyme and let it sit overnight before adding yeast and fermaid o. It usually takes off like crazy and ferments dry no matter what yeast i use or how many sugars i throw at it. I usually go for an o.g. between 1.100 and 1.120.

I've brewed some with peaches in the past, and I have found that using apricots instead of peaches actually makes a more "peachy" flavor after fermentation. Really work trying

I'm really new to the hobby, (and your videos) my GF is already complaining that I have three batches going 😂 I told her to just Wait, it gets worse. As a real beginner, I truly appreciate the "extras" from your time here. Please edit them in! I'm certain I'm not the only new person, and it really does help to see things as they move along, to see the two of you explaining in a way that's easy to understand. I had a bunch of peaches that the local brew shop generously gave to me last time I was there and I had thought of making a peach/passionfruit cider (Kirkland juice) but now you have me questioning using them in a mead. OH THE DECISIONS! With the mead I at least get to UNLEASH the BEJEEZUS!

Hi! Thank you for your work. I have had brewing on my hobby dream list for years. Now I’m doing it! You’ve been a big inspiration for that. Im also a ~30 year veteran of the entertainment industry. I was mouth open agape when you asked about B-roll. I was already considering suggesting you use some brief B-roll to act as a transition buffer when you cut between long duration breaks. I.e.- when you finish mixing the must and you’re going to let it sit; add 30-60 frames of establishing video of the bubbles rising, mother forming and air lock bubbling. This will provide a sense of the passage of time and make the move to your next segment smoother (IMHO). Without them you have a feeling of a jump cut. Thanks for the continued inspiration!

I appreciate the conversational flow and editing of your videos. I am subscribed to, probably more than I should be, a lot of YT how-to/crafting/homesteading and so on channels. Obviously I can't watch them all every single post/video they all make, but I do watch every single video you guys post. I'm not even brewing anything (yet!), so that should tell you something. It's because of how informative the videos are as well as your personality/charisma that both of you have as content creators. I like the b-roll. I love both the simple edit and the more complex. I know it can get crazy editing for hours. I love b roll. But I also love leaving the (unedited) in the episode. Keep up the good work

We are contemplating the stock footage thing. We spend quite a bit per year on those and wondered if they were worth it. From the responses... no. Making our own is more beneficial.

You're videos are perfectly great. Y'all have a great flow & personalities. It's like I'm sitting around talking with friends about mead. I enjoy your videos as you produce them that is definitely what makes them uniquely yours. From viewer perspective it feels like y'all already put a proper enough amount of thought into where/how/what b-roll y'all drop in that as a viewer it becomes a nice seemless flow. There truly isn't much break in the "essence of the video" for me it all adds that little bit that makes it one great video (ALWAYS love reading y'all's shirts!!) The VIP clip in this one was a little commercially but that's not a negative! I want y'all to get all the money so y'all can keep doing a great job!

Great job 👍. I've been adding peaches to my apple cider and wine as a flavor enhancer. It seems to be a flavor many people enjoy. The underlying taste in peach is a "pucker" and it's what's missing in most artificial mixes. And I agree with many others, if you go too sweet, the peach taste will diminish 😁👍❤️

I’m new to your channel and currently getting supplies to produce homemade wine. I tried some homemade pear wine that a friend’s father made back in the day. He used Bartlett pears from trees he had on his property. This was hands down the best wine I’ve ever had in my life. I’m 58 years old 😂

I really like the conversational style as you take us on the journey of making. I'm still dying for an updated consolidated printed cookbook as a companion to these long-form videos. You've learned so much and improved your techniques so much over the years that blindly following recipes even 18 months ago may not get the same product as following a newer video. As for B roll, if it's illustrative then drop it in but I found editing my own videos that when I tried to put in a bunch of b-roll and make a really polished video, it like quadrupled the time in editing and did not quadruple the audience satisfaction!

I've been waiting for a long time for this video I love peach and trust the advice of this channel I will be making this brew and if I like it VERY often and may be doing some crazy things like adding hot peppers and/or spices maybe some tropical fruit to really make it my own

I like your B-roll, I think it livens up the video. I like that you're informative, creative, funny, and charming all at the same time. Your B-roll contributes to being both informative and funny. I definitely don't think it would be better to just have the one shot of you guys with minimal editing, but I don't know how I'd feel about more heavily edited videos.

I found that using a little handheld milk frother is a great way to break up the Fermaid O if that’s something you care about . You can just spin it into the sanitizer bucket before and after for cleaning the built in spring whisk thing.

I enjoy some of the B roll, like the B Roll of the bubbling from the fermentation. It allows me to see what you are seeing and understand what is going on better. I think you know when the B Roll is appropriate, such as the bubbling. But it is ultimately your channel, which I enjoy.

It even LOOKS peach-y!! I too have had awful luck with peaches and pears. Soft tree fruit just seems...challenging. I wonder about plums...might be the same struggle. I did manage an apricot mead, but I just used a bunch of dried apricots in secondary to achieve it. It was....good, but not amazing. 6-7 at best.
