Scones make an excellent breakfast, and a perfect accompaniment with tea or your morning coffee. There are endless combinations of scones but this pear and cardamom are especially delicious and very festive in the fall.
2 cups flour ( you can use 1/2 C whole wheat for some nutty flavor)
1/4 C sugar
2 tsp baking powder
1/4 tsp salt
1/4-1/2 tsp cardamom
1/2 tsp baking soda
1/3 C cold butter
1 egg
1/2 C buttermilk or heavy cream
1 tsp vanilla
1 C fresh pears, peeled, cored and diced
add nuts if you like ( pecan, walnut, or almonds) 1/2 C
In a bowl mix dry ingredients together. Cut in cold butter until it looks like coarse crumbs. Add liquids and pears and mix gently until soft dough forms. Sprinkle some flour on the counter and pat dough into an 8" circle. Cut into 8 pie pieces. Transfer to a baking sheet and then brush tops of scones with cream. Bake at 375° for 20-25 minutes. Make a glaze from 1 C powdered sugar, dash of cinnamon and cardamom, dash of salt and splash of milk. Mix to the consistency you like. Drizzle over the hot scones and enjoy!
