I'm so glad to see somebody in the real world also uses kitchen bouquet. I added to a lot of my gravies and stews mostly for the color but it does have some flavor too apparently because I've made my you know just hamburger gravy a couple times without it and my son's spotted something missing. Grandma always used it and it makes things look a lot prettier and adds that deep dark flavor

I had my brain surgery in mid March and I had follow up appointments yesterday and today at Mayo and they are really happy with my progress. I still have to take it easy. This is in the canner starting the steam evacuation process right now. That was some terrific broth! I had to change the veg amounts a bit because I was short of the full amount of carrots. To make up for it I added in garlic scapes, celery and some dehydrated red peppers. Hubs won't mind, he doesn't like carrots anyway but I know they add a sweetness. Hope you are feeling all the prayers swirling around you!
While watching you make this yummy looking recipe, I had an epiphany! Growing up, my mother would take leftover pot roast and make what she called "hash"...cut up the meat and potatoes and fry them up a bit and then add the leftover gravy. Then serve it over toast. It's a comfort food for me. I have pint jars of pot roast in the cabinet (not your recipe but definitely going to give it a try). I'm going to try making that "hash" with one of those jars. I sure hope it works!!! Keeping you in my thoughts 💜
Jeni, you said you are on day 7 . Did you have your surgery? I thought it was scheduled for July 12? You look great and very energetic!!! I finally saw my neurologist he was great and now I have about a thousand tests to have done . Looking forward to trying out this receipe🤗

The strangest thing is I have lost 50 pounds it’s nice and welcomed but as a nurse I know unexplained weight loss isn’t always a good sign. But I was a NICU nurse for 30 years so I don’t have a lot of adult nursing experience. Is your tea and herbal information printed anywhere for a true novice in that area? I've never made Pennsylvania pot roast, but boy does it look yummy! I will be making some for sure to see if my family likes it. If so, I'll be jarring it up too! Your dress is so pretty and I am so very glad you are feeling better girl!

Many of the ladies have the All American. I don't for a couple reasons...it is very expensive and too heavy for me to manage. Check on Craig's list, market place and Nextdoor App if you have that in your area. A lady actually gave one to me that had been used once or twice. She wouldn't allow me to pay her. What a sweetheart.

I'm busy moving my canning supplies into our old 1920's house cause the new house isn't ready but the garden there will be! Have to haul the water out the door, so back to the 20's way of doing things...except the electric stovetop. Counters are so short in my old kitchen there(we didn't change the cupboards when we moved it), it's kinda weird...LOL
I don’t see radishes on the USDA guide to canning. We like to substitute radishes for potatoes in stews and etc to make things more low carb. Have you heard anything about successfully canning radishes in soups or stews?
I've never heard of pork being called a pot roast before. Pot roast has always beef or deer meat. Pork was always called pork roast no matter how you roasted it. I'm in Ohio so maybe that's why. Glad you are feeling better.
I’ll have to make this with beef because my fussy hubby won’t eat pork. And he will pick out the mushrooms but they are going in, 😂. Thanks for the recipe , sending prayers your way.

Jeni, thank you so much for the wonderful shows you provide to us all. I'm learning so much, but still a long way to go...so I have a few questions: Why use pork instead of beef? Is there a reason? Could you make this recipe using beef chuck instead? And why did you choose to wipe the rims with water instead of vinegar?
Pork because it’s Pennsylvania pot roast and you can certainly can regular pot roast if you like. I have already done regular pot roast video as well. Vinegar seems to interfere with the sealing of the jars.

I have a question for you Jen….when making up the broths for canning meats, can you put anything sweet in your broths? Like a little honey in Asian like broths. I did not do it because wasn’t sure….
Just an idea since you're explaining approved recipe vs safe process: maybe as you talk about ingredients mention the canning times for each ingredient. Might help people understand
Since you put the potatoes in the broth they cooked for 10 minutes. I would think they would be mush by the time they are done canning. Let us know when you open a jar.

I didnt see a followup taste testing video? Any comment any one who made Pennsylvania pot roast? Did you like the marjoram and beef combination, would extra worstershire sauce work instead of kitchen boquet? Would love any input or adjustment made by Jeni /or people who made this
How come your doggie has a handkerchief around it's bumm? I've never had Pennsylvania pot roast and I lived in Ohio for a long time. Looks and sounds delicious.
This is definitely a Pa. potroast. We grew up on this. I can't seem to get to the recipe though, sadly so many popups prevent it. I will wing this and come close to yours. We always made it in the oven and there were never leftovers. YUM!
