Thanks for sharing .. I think in the Chinese Restaurant in Guyana - they use 'Corn Starch' to marinate chicken strips for stir-fry .. and 'potato starch' to make that velvety sause ..

You can use potato starch, corn starch, arrowroot flour, tapioca flour, or xanthan gum for the sauce. I like using potato starch for frying
