This is my 7th dish and I am making Pepperpot from Antigua and Barbuda
Pepperpot from Antigua and Barbuda
500 gr of pork tail
7 chicken wings
8 cloves of garlic crushed
2 Tbsp thyme chopped
1 big onion chopped
½ red pepper chopped
½ green pepper chopped
900 gr of eggplant
300 gr of pumpkin
450 gr spinach
450 gr of okra
300 gr of squash
1Tbsp of butter
1 maggi cube
- Submerge the pork tails in a pot with water and bring them to a boil, once boiling turn the fire off, remove the impurities from the top of the water with a skimmer strain the meat and set aside
- Season the chicken wings with salt and pepper
-In a large pot, melt the butter in hi-med heat and salute the onion, green pepper, red pepper, thyme and garlic for 5 min
-Add the pork tails and keep cooking for 5 min
-Add the chicken wings and brown them for 2 min
-Cover the pot, reduce the heat to medium and cook for 5 min
-Add the rest of the ingredients, add water until everything is almost submerged, cover and bring to a boil
-once boiling lower the heat to low-med and simmer for 1 hour mixing every 15 min
- take out most of the green making sure than no chicken or pork com with it and blend them, put them back in the pot mix well and cook on medium heat for 20 min.
