Peppers and Eggs make a great sandwich!
Ingredients
1/2 Onion
1 Green Pepper
3 Eggs
Salt, Pepper, Garlic Powder to taste
Butter
Hoagie Roll
Medium "dice" the Half Onion and Green Pepper and saute in a skillet over medium/high heat (I prefer butter but you can use oil here).
Scramble 3 to 4 eggs and cook over medium heat until all runny parts are done, add the onion and peppers to the eggs.
Toast your hoagie roll by cutting it in half and removing some of the breading from the inside. Butter the skillet over medium/high heat and press the innard part of the roll face down into the butter letting it toast to your preference.
Add the Peppers and Eggs to the roll and enjoy.
Add Cheese or other toppings/ingredients as you see fit.
