- Basmati rice 1 kg (5 cups)
- cinnamon sticks (darchini) 2 sticks
- black cardamom (kali ilaichi) 2 large size
- star anise (badian ka phool) 1 large
- cloves (long) 6 - 8
- green cardamom (hari ilaichi) 6 - 8
- bay leaves (taiz pat) 3 large size
- coriander powder (Dhania powder) 1 & 1/2 tbs
- cumin powder (zeera powder) 1 & 1/2 Tbs
- Kashmiri red chili powder 1 & 1/2 Tbs
- red chili powder 1 & 1/2 Tsp or to taste

- salt (namak) to taste
- dried plum (aloo bukhara) 5 - 6
for gravy:
- cooking oil 1 cup
- onion (pyaz) 3 - 4 medium size, 750g
- ginger & garlic paste (adrak & lehson)
- chicken with bones 1 kg
- water (pani) 1/2 cup or as required
- tomatoes (tamatar) 3 medium size, 325g
- yogurt (dahi) 1 & 1/2 cup, 350g
for boiling rice:
water (pani) as required
- salt (namak) 5 tsp or to taste
- cumin (zeera) 1 tsp
- cooking oil 1 Tbs
for dum (steam)
olive oil 1 - 2 tbs, substitute: butter / clarified butter(ghee) / vegetable oil (OPTIONAL)
- water with yellow food color 1/4 cup & 3 - 4 drops of kewra essence
- coriander leaves (dhania) chopped
- green chili (hari mirch) sliced
- can also add some mint leaves
