Matcha macarons
1 egg white
3 to 4 drops lemon juice
20 g granulated sugar
37 g almond powder
3 g matcha green tea
50 g powdered sugar
Matcha butter cream *3 g matcha + butter cream
Matcha green tea Kit Kat halves
1. Add lemon juice to egg whites and beat with a hand mixer.
When the mixture becomes white, add one-third of the granulated sugar and mix again, beating three times until the mixture has a sharp point.
3. Shake the flour mixture together and add it to the meringue mixture in two batches, mixing as you cut the mixture.
Make a macaronage.
Form into a circle 4 cm in diameter.
Bake in a preheated oven at 110℃ for 10 minutes, then bake at 150℃ for 18 minutes.
Remove from heat, sandwich butter cream and Kit Kat in between.
Caramel Brulee Macaroon
1 egg white
3 to 4 drops lemon juice
20 g granulated sugar
40 g almond powder
50 g powdered sugar
yellow food coloring
Butter cream
Caramel sauce
20 g granulated sugar + water
50g fresh cream
10g butter
30g granulated sugar
Salt to taste
1. Make macaroon dough following the same procedure as for the matcha macarons.
Add enough water to cover the granulated sugar *20g and heat until brown.
2. When the desired consistency is reached, turn off the heat and add cream, butter, granulated sugar, and salt, mixing each time.
3. Cook until desired consistency is reached. Make the caramel sauce.
4. Fill the macaroon pastry with the buttercream and caramel sauce.
Moisten the surface of the macaroons with a little water and sprinkle with granulated sugar .
Warm a spoon on the stove to toast the granulated sugar.
Macaroon bears
1 egg white
3 to 4 drops lemon juice
20 g granulated sugar
37 g almond powder
3 g cocoa powder
50 g powdered sugar
Ganache
50 g milk chocolate
40g fresh cream
Make the macaroon dough following the same procedure as for the matcha macarons. *Squeeze into the shape of a bear. 2.
Add warm cream to melted chocolate to make ganache.
Place the ganache between the macaroons and draw the bear's face on the ganache.
Rabbit macarons
1 egg white
3 to 4 drops lemon juice
20 g granulated sugar
40 g almond powder
50 g powdered sugar
Butter cream
1. Make the dough in the same way as for the other macaroons, then sandwich the buttercream between the dough and finish. *Squeeze the buttercream into the shape of a rabbit.
