Can I let the dough balls sit in room temperature for longer than 4 hours?

You can, but you do risk the dough balls becoming over proofed. They may lose some of that vibrancy.

Merry Xmas Maria. Thank you. Do a quick search on amazon for micro scale There will be a bunch. Choose your favorite. These measure to the 1/100th of a gram. i hope that helps... andris
