Peruvian Chicken Ceviche
In this video I will show you the preparation of a delicious Peruvian Chicken Ceviche. I hope you like this recipe.
Ingredients:
1 whole chicken (approx. 2 kg)
6 onions
4 tablespoons of ají amarillo
1/4 cup of vegetable oil
6 garlic cloves
2 lemons
Salt and pepper, to taste
Peruvian cuisine frequently uses a few very tasty condiments that may be a little hard to find. Always look in the international aisle of your supermarket.

It is made of a type of Chile pepper. It is dark red, smokey and fruity in taste.

*Ají amarillo paste
This is made with another Peruvian yellow hot pepper. It is creamy and much spicier than aji panca and it’s used in many Peruvian dishes as a condiment.

*Rocoto paste
This red pepper is hot! Mostly used as an added spice such as Siracha but way hotter. Usually eaten with onions and lemon juice as a companion of any meal.

*Ají mirasol paste
It is sun-dried aji amarillo. It has a sweet fruity flavor with little heat. It adds depth and flavor to soups, stews and sauces.
