I had this for the first time yesterday when I ordered Peruvian takeout. It’s the stew that they call seco de carne. They had this onion-based condiment on the side and it was absolutely life-changing. So good! I liked it so much I forgot to wonder why the hell Peruvians call such a juicy stew dry. Nothing seco about it and with those onions on top, it really shined.

Question for you... I've eaten this before, but I can't remember it being that spicy? just how important is rocotto ( or the other peppers you mentioned)? Eager to try this!
Honestly a lot of Peruvian pepper are used for flavor more than heat. You can control the level of heat by leaving as many seeds and veins as you want.
