Peter Ballerstedt, Ph.D., presenting at the Ancestral Health Symposium 2012 (AHS12)
The Reality of Ruminants and Liebeg's Barrel: Examining the New 'Conventional Wisdom'
Abstract:
Grasslands are among the largest ecosystems in the world. The proportion of the earth's land area covered by grasslands have been estimated at 3.5 billion hectares (8.6 billion acres), representing 26% of the world land area and 70% of the world agricultural area.
Forage plants are those plants eaten by animals directly as pasture, crop residue, or immature cereal crops, those cut for fodder, and conserved for later use as hay or silage. These crops vary widely in their adaptation and feed quality, but they are typically low in fat, high in fiber, and not utilizable by humans.
The symbiotic relationship between the ruminant animal and the rumen microbial population permits these mammals to thrive on a low-fat, high-fiber diet. The resulting production of high-quality protein and animal fat is a truly sustainable form of agriculture.
The discipline of diet, health and human nutrition has been profoundly influenced by those who believe that eating animal products causes various chronic diseases, and that animal agriculture harms the environment. Researchers and others holding these world views have formed incorrect conclusions from the associations perceived in dubious observational studies. This contamination of the "conventional wisdom" has also influenced the "new conventional wisdom" held within the ancestral health community. Justus von Liebig's "Law of the Minimum" from plant nutrition can be applied to human health and nutrition to evaluate claims regarding grass-fed versus grain-fed animal products.
Bio:
Peter received his Ph.D. in forage production and utilization. He was the forage extension specialist at Oregon State University and is currently the forage product manager at Barenbrug USA. The combination of his forage-based livestock production system expertise with his understanding of human diet and health produced "Grass Based Health."

so the cow eats grass which turns it into a big delicious steak which we in turn eat and are nourished. many farts later we die and push up daisies which the cows children eat...

clearly you weren't paying attention. he says there are clear advantages to fully grass-fed animals, but the differences aren't anywhere near as great as is often portrayed in the Paleo and traditional foods communities.
@MrBakersean
@MrBakersean 11 лет назад
that includes this presenter. his main point was that the difference isn't as great as is portrayed by many in the Paleo/Traditional Foods communities from a nutritional health standpoint, and he backed it up with facts and science. many would have you believe that "regular" beef you buy in the supermarket is deserving of being given the label of "poison" by mainstream health authorities, but grass-finished beef is a miracle health food. it's not even close to that black and white.

Obviously neither of us where paying attention, if you take a second to scroll through the comments, I'm not the only one who took this message as the main objective of this conference. This channel states "ancestryfoundation" I don't see anything ancestral about soy-corn fed cows who where not evolved to consume such products. Check Allan Savory conferences and Peter Westerveld for further insight

The controversy I find in this talk is the following: on one hand he proposes we eat meat because we evolved eating it, on the other hand he states we ought not to worry about choosing to eating grass fed meat, and opt for cheaper grain fed CAFO meat though this ruminant animal obvious did not evolve eating corn or soy in a confined environment.

Perfectly stated. Is only point is if someone is poor or on the standard American diet they should at least go to meat first instead of go broke doing grass-fed

Peter, As always, a most excellent educational presentation.

But what if the whole beef production captures one CO2 molecule in the topsoil, for every CH4 it releases, dosnt that make it carbon neutral?

the main objective of this CONFERENCE?! ok, now I know you aren't even worth having a conversation with. I attended this conference. I can assure you the overwhelming majority of presenters and people in attendance see a benefit in grass-finished and pasture-raised animals eating to as close to their natural diets as possible. watch Joel Salatin's presentation that opened the conference. US Wellness Meats was at this conference. the WAPF was at this conference.

Now we are understanding each other, I understand where you stand and agree with you to a certain point. First of lets define "science" by today standards, the science this particular speaker claims to elucidate doesn't really, we know that wild varieties of plant such as blue berries hold much higher bio-active compounds including nutrients compared to agricultural grown ones, I believe the same is true for animal food. Also I would like to see other comparative parameters, aside macro nutri

I would love to see a couple of people create their version of the barrel as a way of educating people or simply using it as a template for a "improve this aspect of your diet first". While going 100% on Paleo is a great thing for a lot of people, it would greatly benefit the majority if you could give them one thing to focus on at a time and go from there.
@Mardal

Then how come beef (especially grass fed) isnt considered carbon neutral like bio fuel?
@Sarahizahhsum

Because the data they are using is wrong.

According to Wikipedia methane is 25 times more potent than carbon dioxide. Apparently "climate neutral" is a broader, but less used term, that includes all greenhouse gases. The term carbon neutral may or may not include other greenhouse gases. Source: Wikipedia.
@Mardal
@Mardal 11 лет назад
Isnt one of the concerns with beef production methane? While its obvious that grass fed beef is at least carbon neutral, isnt it still contributing to a net increase in methane in the atmosphere? And methane IIRC is a more potent greenhouse gas...

@robertuwrightjr 11 лет назад
That's a good point. If there's a 1:1 carbon capture but the captured carbon is C02 and the released carbon is CH4, that may be a problem if methane is a worse green house gas than CO2 (I do not know if this is true; not an expert). This would mean the "carbon neutral" definition is inadequate and needs to be refined.
@robertuwrightjr
@robertuwrightjr 11 лет назад
Thanks for the clarification. There needs to be a standardized measurement for green house gas potential (say, GP = potency / half-life in atm). The lack of standard definitions seems to help spin artists, like you said.

Methane is a carbon molecule. CH4. So if something is carbon neutral then it should release no net methane.
