Watching your Island Tour vlog right now. I foresaw the demise of the sunglasses. Hahaha. 😅 I loved that this vlog is 20+ mins long. Yep! El Nido is expensive that's why my friends and I opted for Coron instead of El Nido. Relative to El Nido, Coron is more pristine and less touristy. Hope you could go visit! Hi Fabio, here's how the sauce of eskabeche is cooked: you sauté chopped onion, garlic, a bit of julienned ginger and bell pepper, then add 1 cup of ketchup (banana is best but you can also use tomato), add 1/4 cup water. stir and let simmer for 2 mins. then add a mixture of 1/4 cup water and 1 tablespoon cornstarch (you can also use flour). stir. add 1 tablespoon of brown sugar. add a pinch of salt and pepper to taste. let simmer for another 2 mins. That's it! Enjoy eskabeche, Fabio.
