I did a sour saison earlier this year with Philly Sour followed by White Labs French Saison after 3 days of fermentation. Turned out really well. The tart bite in addition to the saison spice notes and complexity really made it an enjoyable beer.

Love it! Mixed fermentation is lots of fun. Still have my Brett Saison and its continuing to develop character as it ages.

Something that Brett really likes is left over dextrins, they produce different esters and a very fine carbonation like champagne when its bottle conditioned. Doing a turbid mash can really elevate a Brett beer when you let it bottle condition and age ❤️🍻

I copitched philly sour with french saison from Mangrove Jack's äter three days. It turned out fantastic!

This Philly sour is a really fun yeast. I brewed a batch with a "Belgian Blond-Ish" malt bill, pitched Philly Sour, then after 3 days pitched WLP530 Abbey Ale. I like that extra layer of something, but would have liked a bit more impact from the Abbey yeast. Might try it again but pitch a day earlier. Great vid!

@@HopsANDgnarly I wondered the same thing but Lallemand say Philly sour is easily out-competed by other yeasts. As soon as another yeast turns up at the party it just lays down and stops doing it’s thing.

We recently co pitched Philly with WLP300 on a Hefe and it turned out amazing. We only let it sour for a few days, just enough to give it a tropical finish but still have the banana and clove aroma. It really messes with your head but delicious!

Quality production man! Great content! If you have not, a possible suggestion, to split the batch, pitch different yeasts and after fermentation blending. Keep up the good work.

I'm really digging your videos man, good stuff. I'm just now starting to jump in to souring my homebrew so great timing. my next brew is Rapsberry Sour using philly sour but the co-pitching opps are endless. Next up after that Sour IPA...

When I first started brewing. I coptiched a hef strain with a saison strain. I did it out of sheer ignorance. But I got a delicous flavor bomb. Since you asked

Amazing. I did a Philly Sour and Brett and wish I had seen this earlier. I did loads of cranberries in my secondary and bottled a bit too early at 2 months they really foam hah. The Brett kept fermenting wayyyyy longer then I expected (I suspect left over cranberry bits). Gets better every month!

Brilliant video. Love bret so much and it goes so well with sours. A Hefeweizen co-pitch with Philly sour would be great to see. I imagine it would make a really nice fruited beer.

I co pitched a Hefe strain with great results in my Blackberry Gose. I still get the green apple from this yeast though that I don't like.

I think I need to try a hefe Philly combo! I get a distinct flavor from it as well. It’s hard to compete with the clean acidity you get from quick souring for certain styles

Great video. I noticed that you had a whirlpool arm/racking cane type thing in your setup. Where did you find that whirlpool arm with disconnects? Such a cool piece of kit.

Lallemand don't recommend concurrent pitching with Philly Sour, since it's not particularly competitive. Might work with Brett, since it's generally rather slow going too.

What was your PH you were shooting for pre Philly sour? Been thinking about the same combo today, maybe co pitch Philly with a saison as well. Funny had a bottle of Epic brewing Elder Brett 2 days ago and was thinking how I could get similar results. Philly sour is a perfect co pitch. And perfect timing for this video!

Pre Philly sour 5.2 then around 3.5 when adding the Brett. Super fun! If you try it out let me know how it goes 🍻

Something I purchased. I think most people call them hop spiders and I’d really only suggest using one with a plate chiller

I wonder, why did you dry hop and pitch brett at the same time? how long after pitching brett did you try the beer? it sounds like brett didn't do anything here, unless you age it.

I did the first dry hop and Brett at the same time mostly because the fermenter was open but also was hoping it’d benefit from some biotransformation. Hard to tell if it did but you could easily save all the hops for the end if that how you like to do it. I did another DH before kegging. The Brett only had maybe 3 weeks before I started sampling and it was present but certainly not mature like an aged sour or Brett saison. Still I hope I illustrated the concept and inspired a few people to try combining yeasts with Philly sour 🤘🏼🍻

@@HopsANDgnarly Did you nice if you had a pellicle or not? I have only just started playing with sour beers/ ales in the last sixish months. I have been mostly using bottle drags so who knows what all is in there. But the last sour I made was with Coast to Coast that is a blend of yeast and Brett. It had no pellicle, which up to that point was odd to me. Anyways keep up the good work!

Right now it’s in a keg but that will get moved to cans. I will be sure to set some cans aside to see how things evolve

(knock on wood!) I've never had a contamination and I don't keep separate equipment, keg lines, or anything. But you definitely have to have a good sanitation practice in place and avoid cheap plastics
