Our half of pig was ready so we picked it up; our quarter beef will be ready in a couple weeks. Locally raised; knowing this and how it was treated; plus not purchasing from other countries is what we have been doing for quite a few years.
Pricing is different every year for us; I advise if you are interested in doing something like this; look up in your area whom does do it and call them for a briefing on the process and the cost.
