Pickled Chicken Feet | Popular Asian Snack ជ្រក់ជេីងមាន់

Ingredients:
Chicken feet, Lemongrass, Kaffir lime leaves, Galangal, Red chili, Garlic, Palm Sugar, Fish Sauce, Salt, Lemon Juice
Instructions:
-Wash the chicken feet, remove the claws and cut them into small pieces
-Bring water to a boil with lemongrass, , kaffir lime leave and galangal with a bit of salt (the herbs help to remove the raw taste of chicken feet).
-Add chopped chicken feet and let them cook about 15 minutes. Remove all the scum. Do not cook too long, otherwise, the chicken feet will become quite soft and the skin can be spoiled.
-Now transfer the chicken feet into a large bowl and quickly wash them again to get rid of the grease on the surface of the chicken feet and drain out all the water.
-Put the ice to stop the cooking process for about 15 to 20 minutes (Ice will make the skin crunchy and chewier).
-Meanwhile, lets make pickled sauce. Mix well of Lemon juice, fish sauce, chicken powder, palm sugar, chopped garlic, chopped red chili and fresh sliced herbs (lemongrass, kaffir lime leaves and galangal). We want this pickled sauce tastes sweet-sour and spicy so measure how much each ingredients you put in based your flavor level.
-Take the cooked chicken feet from ice and add to the pickled sauce. Mix it well. Now transfer into a container. Make sure that all the chicken feet are immersed in the sauce. Seal the jar and keep it in the fridge for at least 4 hours or overnight for better flavor. I usually stir the pickled chicken feet in the jar once in a while so as to blend the flavors.
