Pickled Chinese Cabbage: How to make it & how to cook with it

My mother-in-law teaches me (and you) how to pickle Chinese cabbage. I'm also sharing a few ways that we cook with it. Pickled Chinese cabbage has been an important food in this area of China (Qinghai) for many generations (at least!). It was long one of the few veggies that the villagers could keep over winter, and it added it's wonderful flavour to the local dishes. I have personally come to love it, and it is very similar to what we in Sweden call "surkål" - also pickled cabbage (but not with the combination of ginger/chili/Sichuan pepper).

You're so lucky to have a mother-in-law who is kind and generous in helping you learn the Chinese culture. I remember the sad story she told about how she was treated by HER mother-in-law. She has a lovely smile and a beautiful heart. No wonder her son is a great husband and father.

@@MiriamFollin hi Miriam. I also have a wonderful Mum and an incredible mil! I was born in northern Malaysia, my grandpa was from China, GuangDong PuNing. My parents hv taught me cooking various traditional Teochew dishes. I am glad to married a Singaporean man. My mil , who is now 94yrs old, has taught me alot of traditianal hokkien dishes too. One of her signature dish is stirfried pickled vegetable. She also has taught me how to pickle vegetable. Your videos have reminded is of my childhood in hometown as well as the close relationship between mil n i. Now you and family have moved to your homeland. Yum! My mother in law is Chinese as well, from Northern China and we pickle cabbage and make lots of yummy pickled cabbage dumplings and buns. So delicious! I'm close with my mother in law and love seeing the relationship you have with yours too!

This is how my great grandmother from Québec and my grandmother prepare food, no measuring cups, just a handful of this or a bowl of that. Even the old Québécois cookbooks don't use precise measurements and it all turns out great. Big greetings from cold, old Vermont! The sounds, landscape, ingredients, etc. is artwork onto itself.

Miss so much these old traditional cooking. We used to do these back when I was still a kid. Now, I'm afraid after my mom passed, time seems to have slowly been eating into our cooking skills. Can't remember how to pickle vegetables till I saw your mother inlaw doing it. Brings back memories. Thanks Miriam. You are just wonderful.

We make (in Romania) pickled cabbage almost the same, but we use horseradish for a preservative instead of ginger, and less peppers :D. We cook it with oil, on the stove, adding tomato juice and then putting it in the oven, we eat it as is, like a salad with a little oil (accompanies meats usually) and, we make pies with it, and, most importantly, we use the leaves to wrap our famous sarmale (meat rolls, but the vegan option exists, you can use mushrooms instead of meat for the mixture). We pickle most veggies - carrots, cucumbers, green tomatoes, small watermelons, a species of bell peppers (rounder ones), cauliflower, you name it, we pickle it :D.

Country cooks are the same regardless of the country they call home. My grandmother and mom never measured and rarely used a recipe. If a recipe was involved, it was always just a suggestion because you modified it based on what you had on hand. And the food is always delicious. ❤️

I am so impressed by that! I'm Sweden most people I know follow recipes very strictly. Then I met my mother-in-law who has never ever followed one! I learned so much from her. I feel like when I don't follow a recipe, I get to know the food in a different way. The cooking becomes more intentional in a way!

@@MiriamFollin From my own experience in the US, most of the people I know who grew up in urban areas follow recipes but the people I know (including family) from rural areas might use a recipe as a basic guide or might not use one at all. If I’m baking I have a tendency to follow a recipe a little more closely but for everything else not so much. The bad part is when others want your recipe for a dish and you don’t know exact measurements. I’ll write it down as best I can but my daughter always says “mine never tastes like yours.” 🤔 Then she’ll say “you don’t really have a recipe for that do you?” I learned how to cook as a child from my mom and grandmothers who were both great cooks. I’ve watched a lot of cooking videos from other countries and the rural cooks all seem to do things the same way...much like your mother-in-law and my mom. Not saying everyone does it that way but it’s just my limited observation.

@@MiriamFollin I am Chinese living in Finland for years, in my mind we Chinese never follow recipes when cooking at home, but the food is delicious all the time. Your video makes me miss my parents in China, hopefully I can go back to China asap!

@@tinalaoshi5485 In my experience, people in rural areas rarely use recipes, but I have Chinese friends from the city and who are my age or younger that often use recipes. So I think it's also a matter of being around people who cook a lot (rural areas) and those who eat out most of the time (the city), and also a matter of time. I think a lot of younger generations simple don't have time or interest in cooking.

Your MIL is such a hard-working lady. She doesn’t need a modern kitchen or the latest kitchen gadgets to be able to cook delicious and traditional food. We are surely spoiled here in the western world. Those dumplings were making my mouth water, yum 😋.

We make German saurkraut twice a year, when the cabbages are havested, once in the spring and once in the late fall. We also make Korean style pickled Chinese cabbage, kimchi. We have a small bowl of kimchi every mornng with breakfast. We have saurkraut at least once a week, on Sunday mornings with German potato rosti, sliced apples, and yogurt. We love your videos! It’s sort of like sauerkraut, do you think? We don’t put peppers and ginger in but everything else. We make a Lunenburg Dinner , Lunenburg is the name of an area around a the town of that name. Boil peeled potatoes and brown spicy sausage. Drain the potatoes, add the sausage and a heap of sauerkraut and simmer till the flavours meld, add pepper and whatever spices you’d like and serve with mustard. I like a sweet mustard but hot would be good for those who like the heat. I prefer Oktoberfest sausage but you could use black , spicy, apple, whatever sausage you like. There are a lot of People of German heritage in that area and this dish came from them originally. Your ways of preparing pickled cabbage look yummy too. 🙋🏼

We shred cabbage with white onion and potato, garlic, salt & pepper. Fry in a skillet til potato is cooked through. Add some cured sausage cut into bite sizes. Very tasty and filling. Also make chicken with cabbage & carrot soup

So nice yo see your mother-in-laws happy face! This is a combination of how we make saurkraut in America and how my Korean sis in law makes kimchi! Very interesting! We use the round head cabbage and crocks like your mom in law did. No rock but I think I will incorporate that in my next batch, so tell her her Chinese ways are mixing in with us! We just use kosher salt, layer the cabbage, (which is sliced on a 100 yr old kraut cutter) then my mother would place heavy dinner plates on it and cover with a cheese cloth tied on to keep it secured. After we processed it we would then can it in pint jars to keep. We would do 100lbs at a time. That recipe came from my German side. I grew up in a German, Swiss, Swedish area of the United States. Close to the Amish area. I am going to experiment with some peppers on a small batch! Stay healthy! Any chance you can translate your husband's RU-vid channel to English? Would increase his audience!

That's so interesting to hear! Especially about the storing part, I didn't think about how to later out it in smaller jars. When you do it first, what kind of pot do you use to make it? I'm thinking about trying to do it in Sweden too. So lovely to hear bout your experience, and that your ways have also been passed down (a 100 year old cutter, how amazing!!).

@@MiriamFollin we use 50lb crocks and it processes in the crocks for a month. they line the walls of our farm house kitchen lol. she removed "juice' that would work up to the top and continue to push down her weighted plate. keep covered with cheese cloth. for canning she did a boiled bath and it boiled a set time. later i bought a pressure canner and it takes less time! will send you some links to canning!

Long-term consumption of sauerkraut can easily lead to gastric cancer, and occasionally try fresh. There is a high incidence of stomach cancer among Chinese in the Northwest. My hometown is the Northwest.

My favorite food with pickled cabbage is 酸菜鱼! Restaurants featuring this dish are very popular in Zhejiang Province.

She should be an example for all the mother in law out there. In my country, most mother in laws are evil and treat their daughter in law differently. But after seeing your mother in law I got a hope that I will have good relationships with my future mother in law
