As strange as pickled eggs may seem, they make for a wonderful snack and pickling is a great method to preserve eggs for long term storage. Today we share our simple brine recipe and bring you along the entire process.

This is gonna sound strange, but I work on my neighbors house and help her with certain tasks, as she is elderly, She tries to give me money, which I never accept, but, I asked her if she knew how to make pickled eggs. Well, for the past 7 years, she makes me pickled eggs, of all sorts of flavors.. My favorite ones are the maple syrup and cinnamon... Every time, I feel like I am having pancakes and eggs ... LOL... Best thing in the world.... She asked me to stop drinking the juice as she wanted it back for something... only to find out that this ole gal was making moonshine out of it some how.. Which is to die for!!! Please note, I do not drink, not on any moral issues, rather, just don't like the taste, but, having tried the pancake flavored moonshine, I might have to be careful becoming and alcoholic... LOL.. that stuff is really good.. Lastly, I am gonna blame her for this... I have put on like 10 lbs... LOL... When I ask her for the ingredients, she never tells the truth.. she says some stupid stuff like "ohhh, it has a little bit of rabbit tail in it, some bat wing, horse knees, and spider butts.".... Silly ole woman...

@@johnnyswag2802 I failed to mention... These Maple & Cinnamon flavored pickled eggs, are exceptionally torturous... Meaning, they take a little while longer for the flavor to saturate into the hard boiled eggs.. Now, imagine, you have a gallon jar of these eggs on the counter, sealed, hidden away from direct sun light, of course... Yet, you have to walk by them several times a day, just living your life.. (Mine sit on the shelf coat room, that leads to the garage) and most items in that coat room after a day of sitting there, you kinda forget that junk is sitting there... BUT... these dang pancake & cinnamon favored hard boiled eggs, just sitting there, looking at you, every time you walk by.. Please note, the first batch, as the sat there, never bothered me, as I had never tasted them before.. but now that I have tasted them, they look at me, every time I walk by them.. taunting me, saying "NOPE...NOT READY YET!"... the next time I walk by them, of course I see them, and the eggs see me, and say again, Even though, it has only been 3 minutes okay from the last time I walked by, the eggs say, "NOPE... NOT READY YET".... It is so not fair, how long these have to sit before you can eat them to get the full saturation aspect.. Yes, you can eat them the day you made them, but you are missing out.. .The day the are ready, I wait an additional day to 3 and clean out a huge spot in the fridge, to hold the large jar.. and the day I pop the top of that jar, is like opening Christmas presents when you are like a little kid. .(maybe that is just me?) Which I typically will set up for the special event, on a Friday night opening.. I likely make this more of a bigger deal then what it really is, but, I did learn one thing that she does, she used the real eggs, the eggs the eat bugs and stuff, the natural eggs.. OMG are those eggs so good. Even just frying up on of those eggs to dip your toast into the bubble part of it, is so dang good.. Find and build a relationship with your local farmers.. in fact, you can trade working on their farm to help the get stuff down a few hours a week, and they will trade you with eggs or fresh milk if that is what you want.. In my state, there are laws that make it illegal for the farmer to sell me eggs directly, and cutting out the middle man.. I follow the law, and I give the farmer free work, a few hours a months, and it just happens that I get a few dozen eggs and milk a month.. what are the odds of that... No money was exchanged.. Both party's Often times, My sons come alone and help.. many years later, They actually took their dates to the farm. and the girls they brought with them, loved it, as they got to see and work with the horses and a few goats..

Hey..I'm 72..pickle my eggs with carrots onions jalapeños pimento cucumbers and yes mixed vinigars white and apple...and hot sausages I put em in the fridge in a humongous glass jar and I'm finally fininishing the year old delicious stuff. I live alone and I'm glad there is no competition for my favorite snacks.

That sounds like a complete meal medley in one jar. I'm making my first jar of pickled eggs for me and my brother and I think I'm going to try something like this with the extra veggies pickled with the eggs. Thank you! PS: Do you add in the pre pickled hot sausages or regular cooked hot sausages?

@@analarson2920 flavor. All apple cider would be too strong for their liking and so they use white vinegar to meet the required amount of vinegar and keep the flavor profile they are looking for.

What kind of sausage do you use and how do you prep them? As soon as I read your post I flashed back to them in the 50s and 60s but forgot all about pickled sausages.

Guys, I saw this video when it first came out, because I have the notification bell, and I told you guys that I was living my Alaska dreams through you, so the next day I made it. I only made 1/2 a dozen eggs and stuck them in the fridge. I had leftover brine so I went to the store and got one of those long cucumber and pickled it. We went to visit my in-laws and ended up quarantining with them for two months. When we got back, I eat those eggs and pickle with. my husband. Both of us first time for the eggs. it was delicious!! But I could not remember where I got the recipe from or where did I put it. tonight I was on RU-vid and there was Eric holding up that jar of egg, and it all clicked. Wrote it down and tape it with my other favorite recipes inside my kitchen closet door. Thanks again guys.

if yall every want to change up your eggs, look into chinese lu dan (eggs braised in soy sauce) or japanese shoyu tomago (soy sauce egg). its a nice salty treat! they go great over rice, noodles, or a savery soup!

When I was little pickled eggs was the first thing I learned to cook. I was 4 years old. We'd cook and peel them, we made a very salty brine cause these were sold to the local bars and I'd put them in my little red wagon and tote them to town. We didn't call it off grid back then. It was just our farm. No indoor plumbing. No heat except the coal stove in the parlour and wood stove in the kitchen. I'd wake up in the morning with ice in the wash basin and pitcher. We had an outhouse out back. But thank goodness for chamber pots in the winter! The snow would be so high sometimes the path to the outhouse was like a tunnel. Since this was northern Maine the climate and everything you have brings back memories of my childhood. So I'm very much enjoying your videos. Wish I was young again so I could still live like that. Sitting around the Franklin stove in the winter braiding rugs out of strips of old clothes. So colorful. Chatting and telling stories.

@@tentam1982 ah, around 1958. In northeastern Maine near the coast. It was a tiny backwater town then. Houlton, Maine. No route 93 at all then. It is on route 1. Not too far from caribou. Haven't been back for a while. It's a good 7 or 8 hour drive from where I am now in New Hampshire. My family has been in New England for 385 years this year. Maine was part of Massachusetts back then you know. I love history. And it's fun when you have a personal connection to the lives of those who came before us.

Goat cheese and goat butter. Goat cream and goats milk for baking sounds wonderful only thing that could make it better would be having a bunch of egg laying hens too. My kids love cheese and eggs and fresh bread, homemade breakfast pizza, cakes, cookies, and so much more with the possibilities are huge especially if you have a garden

It's great when you've had a few in the pub and you get a picked egg and packet of crisps, put the egg in with the crisps and smash them all together. You get the nice pickled egg pieces but also the taste and crunchy texture of something like prawn cocktail, cheese & onion, salt and vinegar ect

A Stab at a Recipe: 1 part water* 1 part vinegar* (1/2 apple, 1/2 white) Per quart jar: 2 heads of garlic Black pepper seed (1/2 to 1 t.) Dill seed (1/2 t.) Sugar and salt in brine (about 2 T. per jar or per 10 eggs or to taste) Layer in each quart jar: Fresh red onion rings (about 1/4 med) Fresh jalapenos (5 to 8 slices with seeds) *estimates are about 2 cups brine per quart jar with 9-10 eggs Illias? Great video. Tip:You could save on gas by starting eggs in cold water let them boil for 1 minute turn heat off,cover and just let them sit for 15min. Also hot water You drain can be used for water bath(it is already hot) just drain to next pot.

I let fresh eggs sit for two or three weeks. When it is time to cook them, I add either salt or veg oil to the water. This makes it really easy to peel them (as I hate peeling eggs.) Boiling the jars and lids also helps the jars seal air tight. Fill them up, put the lid on them and, then turn the bottles upside down.

Chef Tip: Peel the eggs in a bowl of water, submerged, you'll damage far fewer and rinse at the same time.

add a teaspoon of vinegar to the boiling water and you'll prevent any hairline cracks on eggs from exploding

I love pickled eggs. I first tried them 57 years ago when my mom made some. I just made 2 dozen a couple of weeks ago. I use vinegar, onions, pickling spice, black peppercorns, assorted peppercorns. The pickling spice has cinnamon, coriander,mustard seed, allspice, bay leaves, ginger, dill seed, chilies, black pepper, mace, cardamon in it.

I just save pickle juice or picked beat juice, add spices, some white vinegar, and let them sit in the fridge about 2-4 months. The longer the better!

About feeding the egg shells to the chickens: My Grandmother and others in her family would toast the shells in the oven before crumbling them to feed to the chickens. It gave them lots of calcium for other shells plus they would get a taste for fresh shells and peck open fresh eggs and eat shells, eggs and all.

I was thinking about that as the eggs went in the pen. I think they're fine once the shells have been cooked. For shells that you're cracking raw, baking is a great option!

When peeling eggs I like to crack one of the sides against a hard surface and then roll the egg against the same surface and it becomes super easy to peel.

If you guys go through that many pickled eggs you must have to sleep in separate bedrooms. LOL. If not, you are definitely in it for the long haul and made for each other! I think you two love each other just as much as I love yer vids. You 2 are great for couple vids. Been making hard boiled eggs for Deviled eggs and pickling for decades and peeling was always a hassle (tried every method known to man) but recently I bought one of those new fangled Instant Pots and tried pressure cooking them.... Wow, what a difference, not having to store eggs for weeks before boiling them so they peel easier, taste great, good consistency. Five (5) minutes of pressure cook, let sit at pressure for five minutes then put them in cold water to cool them. Easiest peeling eggs ever!

We have the Ninja Foodi Air Frier/Pressure Cooker combo and we make soft boiled eggs all the time. We only cook them for two minutes and quick release then into cold water. The whites are cooked and the yolk is runny. Perfection!

For pretty peeled eggs the secret is to plunge the eggs as quickly as possible into salted ice water. Since you have lots of snow there, this should work even better. The cold shock causes the egg white to shrink away from the shell. I've been doing them this way for decades and only rarely had a problem😁

All eggs have an air bubble in them. If you take a small pain and poked around and of the egg compared to the pointy end. When they boil the are leaves that little hole and the eggs are perfectly round. Then once you dump the eggs in ice water, they peel so easily and have a perfect egg shape

* 1 large piece of ginger peeled and sliced thin. * a few garlic cloves sliced thin. * sliced onion * a few peppercorns * a few mustard seeds * a few caraway seeds * bay leaf * salt/pepper/sugar

I would wash my red beets well, cut off all but about 1 inch of tops and boil until fork tender. Remove beets to cool. Let water from beets settle (depends how clean the skin is) and pour into glass bowl. Don’t pour last of settled water in bowl, you can usually tell. Skin beets (easy if you do while warm) cut in chunks or slice and put in bowl. Add Braggs Apple Cider Vinegar (more water if necessary) Peel your boiled eggs and place in liquid with beets. Adding some chopped onion is optional and strength of ACV. Let sit overnight. Pickled beets and eggs.

My Mom has been making pickled beets, eggs & onions since I was a wee lassie! We don't wait 2 weeks to eat them tho. They don't last the night! So delicious!

Agree, I have been doing this all my life, sliced onion, beets, eggs, with a vinegar/water solution and a few other spices, no sugar, allow the eggs to marinate a day or so, usually gone in a few days.

nice video. :) i love pickled eggs. Here in Germany we don't peel the shell off but just crack it all arround. Then some onion skins are added to the brine which gives the eggs a marble like appearance when it soaks through the cracks. They are then peeled just before eating them. Never tried it with jalapenos, maybe I try that :)

Tap each end on table then roll. Shells come right off. Grandmother taught me and I'm 73! Going to try your recipe. I do the basalmic vinegar ones. Neighbour thinks black eggs are gross. They taste good. Have pink ones from beet juice too. Yours sure look awesome! Now I want to set up my cooking kitchen stove. Have one of those tables!! Great video!

I have always used a higher ratio of vinegar to my water (3>1), just to confirm that the ratio is very open ended. Great video, and an excellent snack food!

if the hens are not producing so much, try adding some calf manna to their feed, it has minerals that help hens produce better. My ranch friend loves using this for her hens, she just adds a little to the feed.

When I'm boiling and shelling eggs, I take the pan off the heat when they're cooked, tip out the hot water and run them under cold water, still in the pan. I let the pan fill up with very cold water then crack each one against the pan and peel it under the water, all the bits of shell float off and the skin slips off. I leave the shells in the water till I've finished then slowly pour out the water, the shells stay in the bottom of the pan and I just wipe them out with a bit of kitchen paper, ready for the compost. None go down the sink, no mess, easy. Your recipe looks good, thank you. Time I made some more.

Only problem with feeding hens the shells is their tendency to peck the eggs they've just laid. Not good.

We just pickled 38 eggs which filled 2 1/2 gal. Ball canning jars and used your recipe. I can’t wait to try these. We raise and use chickens for eggs and extra roosters for meat. We have pickled eggs before and the results were good but this recipe should be better. We just experienced our 1st 0 degrees here in central Texas and don’t want it again. I can’t imagine how anyone could endure those kinds of temperatures for weeks and months. Thanks for sharing your recipe and canning method so aptly demonstrated.

My partner made pickle walnuts here in uk. He was over the moon when he found out my boss had 2 walnut trees but never collected the nuts she let hi have them all. I wasn't impressed with the look of them but he enjoyed them.

Thanks for the inspiration, will definitely make these! Quick tip for peeling eggs I use when making a lot of deviled eggs, you can use a spoon to break the whole shell and then stick the spoon between the shell and the egg. I know it doesn't sound that good, but it's saved me so much time.

@@szodoraitunde9789 I'm Appalachian, and we use about a cup full (which is about what a qt of pickled beats will render) of pickled beet juice per gal jug of eggs. I have seen folks throw the beets in as well.

I've been making these for years and all that I use for the brine is 'Bick's Hot Peppers' juice, it works really good for me, and the pickled eggs are 'ready' the next day....nice and spicy the way that I love them, mmmmmmmmm!

I've always wanted this kind of life but the hustle bustle of life children we never did so I love watching channels like yours !! Boiling my eggs I place them in cold water for a few minutes like you after boiling they peel easier. I never knew chicken's could eat their own egg shell"s, learned another new thing. We always cook our eggshells just to make sure they (chickens) aren’t eating any bacteria, but it is a great way of getting that calcium back into them for shells.

If you put several eggs in a metal bowl, then cover with another bowl, top down, and shake it vigorously, they peel themselves! Kinda like pee!ing garlic or hazelnuts.
