Thank you for sharing! My Mom used to pickle green tomatoes, too. She also made green tomato pies. If we didn't tell guests what they were eating, they always thought is was apple pie.
My grandma tricked me with a green tomato pie once. I just kept wondering why they're were tiny seeds were in there. I ate the whole piece of "apple pie"

Very interesting video Miss Lori. I've never seen pickled green tomatoes before. I'm from Central Illinois. I just finished canning some Apple pie filling this afternoon. You have a beautiful garden. My recipe for pickling is: one cup vinagre to two cups water, half cup salt, and two table spoons sugar; put everything to boil together for one minute, let it cool down a little, pour over tomatoes, jalapeños , cucumbers, and even pork feet or skin.

Sure light levels and rainfall and drainoff and soil type and fertility all result in altering yield and ripening. How do y'all plant your tomatoes? Do you pinch 'em and train 'em? Do you grow them upside down? Do you use stakes or trellisin' ?

Thank you for sharing this very easy to follow video. I made some similar to this using some of your spices. I have a brine of my own that I use but decided to try some dill weed, garlic, peppercorn to the bottom of the jars with some onions as well. My brine is just vinegar no water as my family prefers it very zesty and in my brine I put pickling salt, a bit of sugar, celery seed, tumeric and mustard seed or powder which ever I have on hand. Turned out absolutely delicious! Once again thank you.

I don’t think I have ever tasted pickled tomatoes. I see you leave your rings on your jars Mrs Lori. Is it okay to do that? I like the way they look on the shelf with the rings on myself.
We love them After a while I do take my rings off, but I wait to make sure everything stays seal good, I've never had any issues after 40 years of canning, xoxoxo

Don't worry about the old pot...you should see some of mine and also my favourite cookbook...that thing look's like it survived...barely...a war! LOL All raggedy and stained and falling apart and I refuse to part with it...it was my dear Mum's and one of my treasures in this life. I have a story to tell you lol! I grew up in southern California ... My step dad worked for a turf company ..next to the field they grew tomatoes ..Dad came home with gunny sacks full of green tomatoes I'm talking LOTS OF SACKS LOL! ALSO RIPE ! I remember my great grandmother coming from Kansas to help mom can green tomato mincemeat pie filling ! WE HAD ENOUGH TO MAKE TWO PIE FOR AT LEAST 10 YEARS ! SO GOOD ! I remember great grandma hand grinding all the green tomatoes raisins currants and seasoning.. Fond memories!

A little Dawn and bleach left in the bottom of the pan and leave it for for about an hour and it will scrub clean. I love my castle iron pots, but they do brown on the bottom s.
Never? That is peculiar as bay leaves are commonlyused to add "savory" flavor to a soup or stew. You adjust how many bay leaves based upon their age as they lose the volatile oil that imparts their unique flavor.

Your pot looks like my "bean pot". The only thing I cook in it is beans. Doesn't look beautiful, but makes the best beans! Same with my cornbread pan...it has seen better days, but makes the best cornbread! Shiny pots n pans don't make for a good cook. No apologies necessary Miss Lori. These are a family favorite! I never thought of adding mustard seed or bay leaf...will have to try that. thanks!! We do like them hot, so in the garden we plant hot cherry peppers. Yes, they can get mushy after a while. I didn't like that, so I tried the fridge method... I use a gallon size jug, added all the goodies then added the brine. Waited till it cooled and put them in the fridge, believe it or not they last at least 2 years. As long as you have room in your fridge, I recommend this. Thanks for sharing all your wonderful recipes. I love watching you!

could you explain the turning of knobs after you put the wood in your stove? Do you waterbath can on the wood stove? Do you put a splash of vinegar in the bath water? I have never had pickled tomatoes. Are ya gonna grow some dill next year? I've heard it takes a long time to grow the bay laurel. My dad loved bread n butter pickles and made huge vats of the stuff. I remember the smell of vinegar brine all through the house. Actually Dad did most of the canning, I don't think my mom hung out in her Mamas kitchen much there were so many Aunts, and cousins in there doin it up. But Dad was an only child of a small family so I guess he had to help out in the kitchen or maybe he just found it interesting and learned. Mom used to hide between the woodstove and the wall to stay warm. I saw the home place where she grew up you could see daylight between the boards. It had some glass in the windows and some were cardboard. She was second generation of 13 kids. A lot of people lived there during the depression. Grandpa and his brothers made moonshine and he carried it over the mountain to trade for stuff they couldn't grow on the farm. Blue Ridge Mtns. of Va.

I LOVE canned green tomatoes! We have a catfish restaurant here in Lufkin that serves up good 'ole East Texas fried catfish, and one of their menu items is green tomato relish. They will also sell it to you in jars, if you so desire. It is delicious and makes that catfish even more special. Being raised in Texas, I must have my fried catfish at least once a week! NITA
I have a white porcelain pot that I love and for some reason, no matter what I try, when I make my applesauce for canning, I always get black stuck on marks. scrubbing gets some but I read a while ago to clean stuck on or stained pots put a 1/4 inch (enough to cover the entire bottom) bleach in the bottom. Them sprinkle some comet (an abrasive cleaner) to lightly cover the bottom, stir around with a scrub brush and let set. scrub again in an hour or so. You can leave it on the bottom for up to 4 hours, scrub every half hour or so. Works great for my pots and my cast iron dutch oven that's is porcelain coated comes clean every time. The fumes are a little strong so be careful around kids. On another note. I was having trouble with my lids sealing so I called the Ball company and she told me that you should no longer boil or use extremely hot water on your lids because they are not made of all rubber anymore and you will destroy the seals. Only soak them in warm to hot tap water.
Mrs Lori we love you just the way you are. Your stained pan is real. Just like you are. Do you ever can sliced green tomatoes for frying? I do and they taste just like they came from the garden. Great when the snow flies.
Do you ever put sugar in your canned green tomatoes? That’s the way I like them. We used to buy jars from our local seafood restaurant. Loved those things.
I agree with "twisted frannie".. I love to can and also did pickled green tomatoes this year.. they are so good.. I did 2 bushel of them and its a good thing because I have 2 brothers that cant stay out of the,, what a compliment.. great channel..
