@lumnahAcres what did you do with all the green onions/scallion (green onion tops)? They are edible. You cut cut them up: dehydrate or place them in the freezer. Jamaicans use them in stews, soups, and other dishes. They are a staple in our home. You'll also find them being used in chili, salads, egg fu young, so Mexican and Asian dishes as well. Man, I wish I were near, I would have taken those tops off your hands.
Here in the U.K if you say Pickled Onions we would think of small whole Pickled Onions. Either purpose grown Small Onions or Charlottes. I have made them with sliced normal sized Onions before but not the quantity that you made.
Al, yesterday I must admit I binged on some of the beginning videos again. Yes again! I have re watched your glory days which was such a pleasure to see. Olivia was such a beautiful young lady. My lord the homestead was so raw compared to today. The rock wall lol 😂 was in such a mess but looks great today. Watching you handle operate the excavator, oh my lord... really wish you had video on the very beginning of the homestead or even the house build. Gena has worked and supported you exceptionally. M y Dad used to grow loads of shallots in his allotment. He'd put them whole not cut up in big jars with vinegar and spices then put them in a dark place until Christmas. Never 'canned' them, just put them up. They were the crunchiest most delicious pickled onions I've ever tasted.
Pickled onions sounds wonderful! I also dehydrate, freeze, caramelize in butter and freeze (in small batches) for an easy quick addition to casseroles, scrambled eggs, veggies, screws, etc.

When I was younger I would wear swimming goggles when cutting onions. They actually worked! 😄👍 could you maybe in future share some of your hiking and fishing adventures in your videos? It’s kinda cool seeing the scenery from different parts of the world.

We started hiking when the pandemic hit. A good lesson I learned was to take some ibuprofen BEFORE we head out and I'm way less sore after the hike. So far we've hiked 270 miles since March, aiming for 500 miles by end of year
Get yourself some bromelain (pineapple enzyme) and take that, on an empty stomach w/a glass of water (1 hr before or 2-3 hours after a meal); it dissolves the LDH (Lactate Dehydrogenase) that makes your muscles sore. Usually 1 or 2 capsules is all you need and you can take it 3 times a day if needed. It also serves to make blood cells more slippery, so less tendency to clot (so don't overdo the dosing).
I am not a cat person, but Figaro is one cool cat. He is everywhere, just checking things out. Definitely the boss. Pickled onions or caramelized onions. Too moorish. Very nice and a good stay in job on a rainy day.

My mom used to take red or purple onions sliced thin with cucumbers also sliced and would put them in a Tupperware bowl with 2 cup of apple cider vinegar and cover the rest with water about a gallons worth , she would sometimes add sugar or salt to taste depending on the taste she wanted

This is awesome! We also slice 6-8 big onions, toss them in a little oil & salt and cook them in the crock pot for 12 hours. This makes amazing caramelized onions with no fuss. Cool and vacuum seal into 4 ounce packets & freeze. Solid gold in the freezer
My little garden is doing great we finally got two good rains yesterday. Much needed. And said it would rain today. I like canning squash . I froze zucchini chips the other day. It will be delicious come winter.
My mother used to make a refrigerated dish she put in individual small bowls as a side dish for summer. She used slices of onions & cucumbers layered in a mixture of vinegar, sugar, water & topped with sour cream. It was a wonderful cool addition to meals.
My aunt (all my family) was raised in Western MA. She taught me a dish that I still make. Slice onions into rounds. Peel and cut potatoes into rounds- not to thick. In a foil packet, put some of the potatoes, some onions and a large pat of butter. Add salt and pepper. Continue adding layers until you run out or feel it’s enough. Crimp the foil packet around the layers very tightly. You may want to double the foil. Cook your potatoes on the grill. It generally takes about an hour. Goes great with any BBQ.
Batter Dip Fryed Onions. You have soooo many. Wow. Fresh chopped onions in Russian potatoe salad, fried onions in potato poregies, French onion soup. Onions in beef broth. 😋 yummy.

Been watching for a couple of months now, you made beets not long ago. I love beets, but my adult daughter refesused to eat them. I made your dish with slice beets, carrots, potatoes n onion with avacado oil, she couldn't get enough. Now i make double batches so we can each have them fir lunch next day. Thank you. As someone who worked at panera doing prep work. They just take the red onion rings and put their balsamic vinaigrette salad dressing on it and bake it for 10-12 minutes in the bread oven.
I like to cut up the green parts of onions and flash freeze them. Then I put them into a mason jar with a parmesan cheese top (the green kind - yes! They DO fit perfectly!), and back into the freezer. Those onion greens will shake right out onto a salad, or in other recipes.
Loved today’s show. My daughter always wears goggles to cut onions. Looks funny, but, her eyes don’t weep. That’s a wonderful harvest of onions. They all look perfect. Al, don’t carry everyone’s gear when hiking; each person needs to carry their own weight. You’re sore because you carried too much weight. You shouldn’t be too sore with all you do on the farm. Bringing back memories of mom canning. I seem to remember her doing two stories high in canner. Fun to see this. I want to say she had coiple wooden slats she'd put between jar layers but I could be wrong. It was over 40 years ago. One of my favorite pickles were watermelon rind pickles. Yum.
I chop and dehydrate some of my onion tops for soup mixes ... I put dry mixes vacuum packed in quart jars ... I always seem to forget and rub my eyes ...

All vacuum packed ... I'm not much of a pickler or pressure canner as I don't have enclosed shelves for a dark storage ... Would love a doored pantry ...
It reminds me of helping my Aunt prepare horseradish. We grated it in on hand graters that we called knuckle busters. We all got grated knuckles, by the end of the day we all has hands covered in adhesive tape!!

Here in Argentina we make fugazzeta, which is a pizza stuffed with mozzarella, like a pie, and topped with sauteed onion with oregano and a bit of red pepper flakes. At home we add a handful of raisins. Delicious!

I have only ever had the small pickled onions but I really like how you prepare your onions. I could see me using them on hotdogs, sausages, hamburgs, salads or as a side to a meal. Great Teamwork as usual!
Man those onions are going to be fantastic! I love pickles, of any kind, and I love onions. We have a ton of green tomatoes and a ton of tomatillos. When they all get ripe we'll have to can most of them cause 2 people can't possibly eat that many tomatoes before they spoil! Blessings to all.

I love onions, we eat them in almost everything that we make, soups, stews, chilli, stir fry, fajitas, perogies, on burgers and hotdogs, in meatloaf and I have just ate onion sandwiches
Al and Gina - get the Ball canning book. There are so many great canning recipes from it. I can 3 bean salad, diced tomatoes, fruit preserves, apple pie filling, sweet cucumber relish, dehydrated squash, all of this out of this great book from Ball. I am getting ready to pressure can Norland potatoes. I harvested 45 pounds of Yukon gold and Norland this past week. Some we will eat fresh and some will be pressure canned.
Here in Newcastle in the North East of England we fry lambs liver and onions which is delicious and we make onion pudding made with suet and boiled in muslin cloth. It is usually served with soup.
French onion soup topped with a French stick croutons with melted cheese on top . Yummy . Plus you can make big batch and freeze it . Cook the sliced onions slowly until they are dark brown and caramelised. 🤩🥰
Pickles , relish , zucchini pickles , chili sauce , tomato sauce , raspberry jelly and black berry jelly( seedless) ,corn relish, candies jalapeños... these are a few of my favorite thing to can
Happy Thursday Lumnahs, can dry onions for soups, stews, chili etc. Onions for onion soup, yummy. Also Chilling onions till chilled in the fridge before use will prevent the tearing, and swimming goggles help. I sliced my onions into rings and pickled them to use as fresh for the day and they would be gone at the end ...used vinegar water and a little sugar. Sometimes no sugar, but salt and pepper. Also slice cucumbers into rounds and did the same to them as the onions, they were always refreshing to eat that way. One thing might think of besides drying veggies is fruit, better than candy, my kids would come home from school for a dried fruit snack. Also its always nice to have a helper when putting up the harvest. Good job to you both 👏

I love onion jam, for sandwiches, burgers and just on anything. You can add any herbs but it is simply onions, olive or avocado oil, balsamic vinegar and sugar. Soooo good and I am sure you can can this. Soooooooo good. We can never can it because it gets eaten to quick.
schifflange farms : now they say that metal things can chip your jar rim, even minutely.. I just use a chopstick and don’t risk it.. it isn’t any more time or effort for me to reach for a chopstick, rather than a knife.. I save chopsticks from the occasional restaurant Chinese takeout..🤗
I agree, besides using a rack on the bottom, when double stacking using a rack in-between is to stabilize the top row of jars, so that they don’t tilt over or fall over on their sides. This could interfere with the sealing, and possibly allow the jars to bang about inside the pot. After using a metal butter knife for years to de-bubble, I started using a throw away plastic knife. It works perfectly and cheap!
All these replies are great advice for Al and Gina! I know you can pressure can double stacked (with a rack in between), but I've never heard of water bath canning double stacked. Also, not to be critical of Al, but his water didn't even look like it was boiling yet...it looked like just some escaping bubbles from the jars. Timer shouldn't start until the water is definitely boiling. Just want them to have successful canning and be safe.

A very acclaimed restaurant here in San Francisco serves pickled red onions. Not only sweeter but the reddish color imparted to the flesh thru pickling is aesthetically very pleasing. I prefer this onion in general of others but especially when pickled.

I feel you on the soreness after hiking. When I was in the Air Force and going through combat training for our Iraq mission, we had to do a 3 mile ruck march in full uniform with 65lbs ruck sacks and M4's. The only "hiking" I did in Iraq was over to the hummer from the tents.
