I come from a long line of farmers..and thank God I spent summers with my maternal grandmother....it still serves me well the lessons I learned from her vast knowledge and experience...she had 7 kids..js

I have a friend that cut the tops off and seeded anaheim peppers, stuffed them with cream cheese and ricotta, pinned the tops back on with toothpicks and grilled them.... They were amazing!

Our favorite use of cherry tomatoes is dehydrated, split, with just a tiny amount of salt. Some of them stored in oil with basil and garlic for pasta. Or made into pesto and frozen. YUM!

I cut them in half roast them with onions and garlic and olive oil throw them in the food processor, add basil and cream or milk for tomato soup.

Figaro is the master animal of the homestead. Those are great looking peppers. They are delicious stuffed with ground meat, rice and a little sauce. Bakw in oven and spread some parmigiano on top. So good. I really enjoy your vlogs. A good wholesome family teaching Olivia responsibility, wholesome values, love of family and all about the homestead. Peace and love

Cherry tomatoes: Cut in half, mix with a little olive oil and italian seasoning. Dehydrate cut-side face-up. Amazing snack! Stores well

most pepper cores (if not all) are attached to the cap/stem if you cut around the outside layer of pepper but not the middle just below the cap, you should be able to grab the stem, twist, and pull out the core and most, if not all of the seeds with no fuss. i used to slice up hundreds upon hundreds of peppers when i worked for papa johns.

If you shove the stem inward and then pull, the seeds and stem release easily. No waste and no aggravation.

Cannot tell you how much I enjoy ypur channel. I am 71 and grew up in San Antonio Texas. I grew up hunting, fishing and picking corn in a field my father owned. We also traveled to Mexico often, I remember once we were in Juez at a restaurant that served a jar of pickled jalapenos, carrots and mushrooms, I do not remember if there was any other ingredients but it was really good. I would like to add okra and onions to the bottle.

I once made pickled cherry tomatoes whole - I believe I got the recipe from the Ball Canning & Preserving Book. They were delicious and looked so pretty in the jar. They were in a dill brine, much like that of a dill pickle. Highly recommend it. Alison from Ontario, Canada

I grew up watching my mom canning and making pickles. She always PACKED the veggies into the jars to reduce air space, increase the yield per jar, and save on the brine needed. They she'd do what Gina does by running a knife around inside to get the bubbles out. Nice video!!

I love pickled banana peppers, it brings back fond memories of my Dad. He always kept a decanter of them on the kitchen table, and when we would have collard or turnip greens we would pour the juice over them. Yummmmmm!

With my tomatoes, I dehydrated them and canned them with olive oil and garlic. Make great tasting pizza topping or can be used in tomato sauce, marinara sauce. It's just good.

I always enjoy watching the ride. I used to live across the border in Western Maine and made that trip more times than I can count. I always liked seeing the old Opera House building in town. Sure do miss Maine.

I remember in the mid to late 90's, hurricane Opal came up through Panama City Beach, Florida all the way to Southeast Tennessee. She still had hurricane force winds. I watched my neighbor's trees across the street bow over and kiss the ground more than once. It was a rough day. We had several tornado warnings and a few touchdowns. It was a terrible day. Stay safe.

Cherry tomatoes are great for salsa. You can also wash, freeze and when you collect enough, use them to make juice, sauce or paste. To do that, cook and strain or run through a food mill to remove the seeds and skin then cook some more to your liking for the sauce or paste. Can in pint jars as you would regular tomatoes using citric acid or vinegar to boost the acid level a bit because cherry tomatoes are not as acidic as regular tomatoes. When pickling things, if you have extra brine, jar it up and process with the pickles. You can use it to make more pickles or in things like marinade or salad dressing. No waste. (Or if you are doing more pickles in a few days, just refrigerate it to use) Blessings to your family ❤️

Your animals would not have the personalities they do if they didn't have you folks to interact with. I think the success of a lot of the channels is the relationships the humans have with their animals. That relationship is the absolute best no matter what species. You folks have a hugh selection of personalities. I hope that aspect of your homestead stays small enough to retain those relationships. Good job of showcasing your animals. It's a gift. Have thought of trying to make a TURDUCKING. It is a mix of boneless Turkey, Duck and Chicken. First/Outside is the Turkey, next layer is the Duck and the inside layer is the Chicken. Spice and stuffing then Roll together and tye with cooking roast string. Cook until fully cooked.

Glad there was no storm damage, went through hurricane Michael almost 2 yrs ago and people are still trying to recover. Don't wish that on anyone.can't wait for the new construction to begin. Hope everyone's staying safe,and wearing there mask..luv you guy's and your farm

I am always so worried when I see you carrying the hot jars in the boxes. I use a heavy duty plastic bin, like a milk crate only shorter, to carry mine. I would hate to see you get burned or lose your beautiful canned goods. Thank you for sharing!

Good to hear you'll didn't have storm issues or problems. Your pickled peppers look amazing!! Every time you show your greenhouse high tunnel I'm so impressed, and can't wait to habe one. Hubby and I need to figure out what size of greenhouse high tunnel we want. We also have to find a company who will deliver up in our neck of the woods, in time we will get one over here!

Figaro cracks me up. He is some watch cat. Around my neck of the woods, we cut the banana peppers length wise, in to quarters and pickle them. I love pickled banana peppers too, they are so good in salads and on sandwiches/subs or just to munch on. Gina, your meal looks so yummy! Glad y'all didn't get any damaging winds from the hurricane. A little rain is always welcomed.

For cherry tomatoes - FREEZE em ! Pop them in soups, stews, roasted veggies, pickle some, too! They’d look pretty floating in some cool cucumber soup...

Onions are good in pickled peppers. As is garlic. I just peel and cut about 1/2 way into the garlic clove and add 1 or 2 into each jar. And I put about half an onion per pint of pickled peppers. Just things you might want to try in the future. Hurricane season runs from June 1-September 30. We are just entering the peak of the season.

Cherry Tomatoes are very good dried, just split them and put them on the dryer and they take a bit longer than regular sliced tomatoes, but have better flavor as well.

We love pickled banana peppers. We bought four plants this year and they were LOADED. I brought them in to start the pickling process and started cutting the up. These were hotter than fire! Literally burning my skin and eyes. We came to the conclusion they are Hungarian wax peppers which are very very hot and were miss marked at the nursery! (we always buy our peppers as started plants rather than from seed...not next year!). I pickled the ones I brought in, but they are so very very hot, it will take very long time to even get through the 12 pints I pickled. Yours look amazing! Enjoy them! I am jealous. :)

I love watching both of you. You work side by side and enjoy it! You do things for each other. Simple things that mean so much to one another. Like pickled onions and banana peppers. You guys remind me of my husband and I. I miss him every day for the last 16 years. I loved how his eyes wrinkled when he smiled. How he would just do that smile when I made his favorite meals. Peppers and onions are easily sliced / chopped and frozen for future cooking, too. No blanching required.

If you want to preserve the crispness of your peppers, drop in a couple of bay leaves into each jar. Bay leaves contain tannic acid and preserve the crispiness of your canned food products. If you don't have bay leaves, a tea bag will work also. Don't worry...no tea flavor will get in your food. Just a thought. Cheers!

I love sweet and sour meatballs. My recipe is an old time recipe from my grandmother. You thicken the sauce on the stove and pour it over the meatballs, pineapple and peppers. I’ve changed it to cook in the crockpot all day, smells great. It’s a holiday treat my family asks for every year. Tomorrow I’m pickling jalapeños and canning bread and butter pickles. My dill pickles have another week. Can’t wait! I’m guessing the Mrs isn’t a morning person. I saw the stink eye about 5:18. Haha Im not a morning person either. We got very high winds on the coast. A wind gust almost knocked my 6 yr old grandson over, I had to grab him. We got downpours for a little bit, but it was over very quickly. Not enough to water the garden.

Cherry tomatoes can be canned just as you would any other tomato. Tip on the peppers, whenever it says "pack" you should really pack them in tight. Otherwise once processed it will look like half a jar of peppers filled with brine. There is actually a wooden tool to pack down stuff in jars. Also 1/8 tsp per jar of pickle crisp will keep peppers from turning to mush. Left over brine can be stored in a jar in the fridge and used in future batches of brine instead of discarding it. One more tip, when putting rings on jars, you should only tighten to finger tip tight. Cranking them down tight as you are doing, can cause lids to buckle and not seal during processing. By finger tip tight, that means just until the ring stops turning using just your fingers tips.

I dehydrated my cherry tomatoes and ate them like a snack and threw them in soups and stews. Where ever you need a bit of tomatoes. I also dehydrated bell peppers and ate them.like a snack. Delicious.

Whenever we'd pickle green bell peppers -- we used to place one semi-hot banana pepper into each jar. As time passes, the bell peppers get hotter and hotter. The banana pepper really enhanced the flavor of the green peppers.

We always stuff them with ground meat and put them in the oven. Make them just like you would with stuffed green peppers. Make them Hot.

They are yellow Bananna pepers, a sweet pepper, not hot. I grow them every year, delicious to eat itself or in salad, roasted with veges. Never tried picking or fermenting them but might give it a try.

It's so funny you made meatballs. I made Italian beef meatball mix yesterday and cooked and canned it today. Now I have 105 spicy Italian meat'a ballz, LOL. I canned 175 spicy chicken meat'a ballz yesterday. I love seeing jars of tasty home-canned stuff waiting in my pantry!

WOW nice harvest of peppers and those meatballs look amazing! I accidently had pickled banana peppers and scrambled eggs once, and it was amazing. I say accidently because I didn't order them but for some reason someone else did and I was given their eggs, said it was wrong but will try them anyway and I actually enjoyed them so very much. Love your homestead. So sweet to see Gina with all her animals following her around. Hope you are all safe from the storm, animals also.

Those second peppers look like what we call Anaheim peppers. I put them in, seeds included, to cook with beans.

Those banana peppers are so great mixed in with sliced onion and cooked on the BBQ plate or as a side salsa cooked in a saucepan or frypan with added tomatoes and a little chilli as a side dish with almost any meats. Yummy yummy.

Roots and refuge recommend s halving cherry tomatoes and dehydrating them. Can be then used in pasta dishes and salads and as a snack. Also you are the first pubic figures in North America from whom I have heard Worcester pronounced correctly. Nice.

I’ve lived in New England all my life and have never heard of Worcester sauce. I was wondering what it is. My recipe called for soy sauce. Interested in what the difference is? I usually use coconut aminos.
