Pickling Beets Recipe
10 lbs fresh beets
4 cups white vinegar
2 cups reserved beet juice
2 cups sugar
1 tbsp pickling salt
Wash beets and cut off leaving 1-2 in of stems attached. Cover in water and bring to boil and cook until beets are tender. Remove stems and peelings then slice and add to prepared jars and pour brine over. To make brine add all ingredients above (except beets themselves) and bring to boil and keep hot. Once you’ve placed sliced beets in the jars and places lids on with rings process in water bath for up to 30 min.
