I love how they do this as a group, so much of Italian-American culture is that. I miss it since we moved from our hometown when I was 5. I have an early memory of all us girls and women making homemade noodles before I was 5 yo in Cleveland.

Found this in August 2020. Sorry to hear of the passing of Concetta in March 2020. She seemed like a hoot! This video is what family is all about... I enjoyed the fun and laughter. I have some old "family" recipes that were "secret" too and then I thought that if I didn't share them, the "old" recipes would eventually fade away. So, I decided to share them. One is for the most amazing pickled hot cherry peppers, also a 2 day project! I needed the recipe to be out there in memory of the person that gave it to me. More to the story, but not on this forum. I truly hope the family keeps this recipe alive, even if you don't share "the secret" to outsiders. lol
I love doing these canning and tomato sauce in jars with the family gathered. So many laughs and teamwork! I did 10 bushels tomatoes just for my family it made 100 tomato sauce jars! Keeping the tradition with my family ❤️

Hang the filled pillowcase for a couple of hours and when the bottom of the case is drenched put it in the washer on the spin cycle and hang it over night. Your family is lovely and lively just the way it should be! Thank you for sharing.

I never thought about using it on sandwiches or in cooking as a topping with tomatoes. I like the fact that there is not too much vinegar either! Love this!
beautiful family ....your all very lucky :) it dried in a press ...like when you press wine ...using weights ...& of course time that is how i do it ...i am italian-canadian...we take it to another level ...WE would add freshly squeezed lemon juice ...for the size of jars you use ...add 1 tble spoon then top off with extra virgin olive oil ...try 1 jar you might love it ...ciao America bella
Sitting here, making pickled eggplant and wondering how others do it. Our family recipe is putting them in boiling water for a few minutes. (making sure it's not mooshad) Good to know it can be done without cooking!! Maybe next year, I'll try this recipe!! My parents were from a little town called near Caserta called Formica! Love to watch yall work together. Laugh about the peppers. When I was a teenager I was helping a friend make stuffed jalapenos as part of the relish tray for a home wedding. I had never worked with tons of hot peppers and did not wear gloves. My the end of the day I was choking and had no skin on my hands.
She is not my Mom she is my girlfriend's Mom Dolores in the video is my girlfriend...you never see me I am filming and narrating the entire time...I love Concetta and call her Mom lovingly.

I suspect a pillow case and a big strong guy is the original salad spinner. I am curious. No water bath to seal the jar is needed? No refrigeration? How long do the pickles last in the jars?

I really enjoyed this, it was a lot like being with my family back in the 70's. I found this looking for canning recipes for eggplant. It appears that you are just preserving in the oil, but how are you storing it, and how long does it keep? Anyway, thanks for making my heart happy.

+artistmama1 Exactly; those ratios are important for this recipe ... not much use except for entertainment and inspiration ... the vinegar/water piece is safety chemistry; everything else is art and taste ... I'll have to keep looking ...
I think they twist/drain then spin the pillowcase around, at least that is what my family did. There is no need to hang and wait for it to drain if you have pillow case spinners around!
