Today, you will learn how to make another enriched sweetened shortcrust pastry recipe. This sweet pie dough recipe is easy to make by hand. This is the last of the four main types of shortcrust pastry we will go over, also known as a pâte sucrée. Pâte sucrée translates simply into “sweet dough.” This sweet pastry is a very rich buttery crust that is also lightly sweet to the taste. It is made using the creaming method. This pastry is nearly as sweet as a cookie, and falls somewhere between a savory pie crust and a rich sugar cookie. In fact, both the sweet shortcrust pastries are in many sandwich type cookie recipes and gingerbreads. This crust is so delicate from all the sugar that it practically melts in your mouth but is also sturdy and snappy under those cream pies and custard tarts. Pâte sucrée is more dry and snaps in comparison to pâté sablée that is more sandy and crumbles.

Recipe Tips:
✔ This recipe is for a single crust conventional pie pan. For deep dish pie pans (greater than 1 1/4” high) or if you want to make a pie with a top crust, you will need to double the recipe.
✔ Try not to overwork the dough for best results.
✔ If you want to use a mixer, always work on a low speed and only combine ingredients until they come together. Do not over mix.
✔ Margarine can be used instead of butter. Be sure you are using margarine with at least 80% fat content and not vegetable oil spread.
✔ If using lard or vegetable shortening, add up to 2 more tablespoons (30mL) of water, one teaspoon (5mL) at time until you get a workable dough.
✔ If you want a challenge, try using milk in place of the 3 tablespoons of water or 45mL. See how the texture changes.
✔ Recipes were created by weighing ingredients. The recipe can be subject to change. Be sure to check the website for any alterations.

Wonderful video Sara thanks🤩 Cool,I am looking forward to making a crust I will wait until the rolling out video to try🤞 I use bakers sugar now and it blends super easy.I attempted once to grind it in the blender but it was a big mess So I pay for the bakers sugar

Oh man, a long time ago I broke my blender doing exactly that! 😳🤣🤦🏻‍♀️ The sugar went up into the motor and seized it. So good call on that one!

@@Jacksonsjob Some people just have a natural born talent... Back in the 80's i used to tape on my vcr a show called "the Urban Peasant" hosted by James Barber and planned my meals by what he had on his show. The only downfall was how much salt he used! His shows can be seen on RU-vid. Then of course Jacques Pepin for his no nonsense approach to simplify the culinary experience. And finally, Domo took his last breath on the 15th. Those last two months were beyond difficult.

Im so incredibly sorry about Domo. It’s not easy losing your beloved pets. They are family to us. I have seen some of James Barber’s shows! I think he’s very talented. Pepin is still doing videos on RU-vid and I like to watch him. I love how he doesn’t make so many rules and shows real life cooking. Nope, no background. I’m actually have my MBA in administration and accounting. I was an accountant before this. I started this channel to work on my speech and physical limitations after a disabling illness took my speech, ability to eat solid food and move much of my upper right body for a good long time. I could do nothing but watch tv so I watched cooking shows. 😂 I started this channel to practice my speech and get moving again as they directed me to work on it at home. Never even expected people to watch. I figured at best my family would for grandma’s recipes. They don’t. 😆🤣😳👩🏼‍🍳🍪🫣

When I was in the airforce, I attended a two week course on how to teach. It was called S.I.T., how the military love their acronyms. Situational Instructional Technique, on using overhead projectors, 16mm film and video and other audio visual aids. The instructor would film us as we made our presentations, then play it in front of the course to help us perfect our “visual” selves. I never learned as much as when I became an instructor. I would spend 6 to 8 hours for one hour class in preparation. And there is nothing drier than teaching electrical engineering and avionics on an aircraft. I truly enjoy your presentations, I think I would be the student that would bring you an apple every class. You have such a calming, measured, encouraging way of presenting your topic “du jour”. Maybe this was your calling! It curious how fate can dictate the direction of our paths. Yeah Domo. Gosh! he refused to accept his demise, complete denial. I have a piece of heaven on earth in the country where can can enjoy eternity and also from where he can see the landing at the end of the road when we show up. A perfect place to traumatize the small woodland creatures and run amongst the bracken.

Ah I bet that was a difficult subject to do presentations on. It sounds like you had a rewarding career. Thank you for your service! So a bit of a confession: I find myself quite awkward. It never gets any easier no matter how many times I record my voice. 🤭 Yet, I enjoy helping people learn to bake as it creates a lifetime of memories for them. There’s so many recipes that take me back to childhood or other key moments in life that I want others to experience the same joys and comfort over the years. Our boxer was much like Domo. It was hard to say goodbye to him. I grieved him more than anything I’ve ever grieved. He was the first dog as an adult and married couple. Just like Domo, he was still full of life until the end. Unfortunately, he had brain cancer and it wasn’t treatable.

@@Jacksonsjob I too have often wondered why there is that awkwardness in hearing our recorded voice. Out of curiosity, I just did a quick search and found this article in the Guardian newspaper… [Most of us have shuddered on hearing the sound of our own voice. In fact, not liking the sound of your own voice is so common that there’s a term for it: voice confrontation. But why is voice confrontation so frequent, while barely a thought is given to the voices of others? A common explanation often found in popular media is that because we normally hear our own voice while talking, we receive both sound transferred to our ears externally by air conduction and sound transferred internally through our bones. This bone conduction of sound delivers rich low frequencies that are not included in air-conducted vocal sound. So when you hear your recorded voice without these frequencies, it sounds higher - and different. Basically, the reasoning is that because our recorded voice does not sound how we expect it to, we don’t like it. Dr Silke Paulmann, a psychologist at the University of Essex, says, “I would speculate that the fact that we sound more high-pitched than what we think we should leads us to cringe as it doesn’t meet our internal expectations; our voice plays a massive role in forming our identity and I guess no one likes to realise that you’re not really who you think you are.” Indeed, a realisation that we sound more like Mickey Mouse than we care to can lead to disappointment.] …and there you have it!

@@Jacksonsjob I did a two parter simply because i thought that an algorithm might have set limitations. As for the military, i strongly encourage all students coming out of high school that might be lacking a certain direction, to join and embrace the discipline and education offered. Let alone the close bonds that are formed. Not necessarily to spend 20-30 years at but, 5-10 years is a great experience. I regularly cross paths with people from my squadron who live in my area and others that are active or retired. Just last fall i was walking Domo and came across a man playing in the front yard that had a young puppy. Wagging tails are a great introduction medium. I mentioned something to his son about learning to scuba dive and the father asked me where i got my experience. I replied in a SAR course. Another acronym, Search and Rescue. He immediately lit up and proudly stated that he was a retired SAR pilot 5 years ago from one of my sister squadrons! Can you visualize two old ladies at a church social, chattering away sucking back tea and scones! yup that would have been us. Hmmm, scones could be an interesting next to do... Mentioning church socials, wouldn't it be something to find hand written cooking notes from a bygone age, penned by a Mum. I only have one from my grandmother for her home made marmalade. I did enjoy helping her in her country kitchen making rhubarb preserves. Somehow she always had a ready supply of "Maple Leaf Cookies" nearby. Gosh yes the demise of our beasts is in some ways more difficult to deal with compared to a person. When my first Golden died after 21 years, not a type o. I was devestated and poured my heart out through my tears. When my father died, not a drop! When i announced the news to my mother, she suggested that i light a candle for him. I did and that evening sitting in the dark with a large lit candle. I thought to myself, i hope there will be someone to love him...at that exact moment the flame drowned in liquified wax, then the side of the candle opened up and drained the liquid and the flame burst outwards. I immediatly stated "Okay, okay i got the message!". Domo was just so stubborn and in denial, he chose the path of suffering and forced my hand after two months. I will have to deal with that with time.
