Great job on the grill guys. I heard you say the baffle is galvanized, I know galvanized metal and heat don't mix because the galvanizing puts out poisonous fumes when heated. I'm not sure what temperature it does this at but please check into it so nobody gets sick. Keep up the great work guys.
@@GreenhornBBQbeer it's not a worry. If he gave the pit an hour to heat on the first use it burned any toxins off (as its there to deflect those high temps). I made the same sort of mod to my trailmaster before I ever used it. I have cooked for hundreds of people now and I have never made anyone sick. My deflector runs the length of the bottom grill with holes drilled that become larger from right to left. I get an even temp across the whole cooking surface. I installed the same thermometers you did at grate level. I put the green egg felt gasket material around the smoke chamber door opening. Also I installed dryer vent from the exhaust pipe down to the cooking grate to keep the heat at the cooking surface and prolong smoke contact. After these mods I use less fuel, maintain constant temps, and can easily have consistent results between cooks.
