This has happened to me. On Sutton Daze pineapple pepper jam utube channelI learned that she said add 2extra tsp of pectin. I've lost many by being too runny . I named my Runny Jam GLAZE, lol I told people to add the jar to a brick of cream cheese. It's so yummy on pork and fish chicken etc. My sis still used it on toast. Good luck. Most jams you add pectin, boil hard for a minute , then add your sugar and boil hard again. I've never seen a recipe as hers where you add both and only boil 1cminute. That could be your problem??
