hey noreen, this was an awesome cake. i did not use the instant pudding the first time just to have a comparison. i have use duncan hines for years, though not exclusively, but mostly. i generally look for "super moist" or "deluxe" versions in a cake mix anyway i did try this recipe and it was a huge success at my church. i plan on doing it again this week. do you have any similarly easy recipes for peach cobbler?

My mom used to use the Duncan Hines yellow cake mix when I was growing up. She just used the reserved pineapple juice in the can in place of the liquid. It always turned out delicious! Thanks again for the reminder Noreen! ;o)

I only use Duncan Hines because it is the very best quality cake mix you can buy, in my opinion. The ingredients are fine, nothing really questionable. My mother who was a professional pastry chef and cake decorator always used this mix to make her cakes with the pound cake recipe I have shown before using the extra eggs, oil and pudding mix. I have used others before and none rise the same, have the same moistness level or the same flavor. Overall it is simply the best choice for me.

My aunt used to do this cake using the juice of the can and I always loved it , but I forgot how to do it so started to look for a recipe similar but most upside down recipes on RU-vid did not call for the juice so I was frustrated until I found your video , this is the recipe I will use , thanks for the advice on the special upside down cake , it was a pleasure watching your video.

He likes the edges super crispy. This recipe comes out with crispy edges all the way around. I'm sticking with this one!
Tfs looks delicious. Also i will make this cake but I will put JELLO GELATIN ISLAND PINEAPPLE flavor NOT PUDDING. But next time i will use the vanilla PUDDING. I wish I could have seen the inside of cake.
I’ve made this cake with both the yellow cake mix and the pineapple cake mix when I can find it. I gotta say that the pineapple cake mix is by far better than with the yellow mix. The pineapple flavor isn’t really as strong with the yellow mix although good i prefer the pineapple mix. Thanks for the recipe delicious as always Noreen.
Hi Noreen, I just wanted to let you know that I made your pineapple upside down cake for Easter and it turned out absolutely beautiful! The only thing I did differently was use crushed pineapple instead of the rings. The reason for this was because I wanted to use a couple of cans before they expired. I can tell you that there wasn't a stitch of cake left by the end of the day! ;o)

this is an awesome recipe. If you are using a glass baking dish though and not using a warm pan, you will need to at least 15-20 minutes to cooking time
I know your tip is six years old but someone like me may still see it in the present, 2022. You could always melt the butter in a glass baking dish in the oven after it preheats. The pan will get warm enough to melt the brown sugar in the same way it would in a metal pan on a burner. And you wouldn’t need to add an extra 15 to 20 minutes to the baking time.

No. I do not have a video on how I come up with my own recipes. It is just years of experience. Knowledge of recipes. The chemistry of cooking. Proper training and experience. Reading cookbooks and cooking recipes helps.

The banging the pan down for cakes (and brownies) helps get any bigger air bubbles out. This usually happens in cakes because you have to mix them longer than cookies or other desserts so it gives a chance for more air to get in - and then you have holey cakes. So you bang the pan gently a few times to make the trapped air escape, no more holey cake.
+Patty Dennis Nothing. There is no substitute for the brown sugar in this recipe. This may, unfortunately just be a recipe you will have to pass on since you are on a restricted diet. You may wish to look up diabetic recipes for pineapple upside down cake. No one in my family is a diabetic so I don't do recipes like that. There are lots of other sites that offer them. Sorry I couldn't be more help.

You recommend a yellow cake mix or recipe if you can't find pineapple cake mix. I've never seen a pineapple cake mix, but everybody in my family (grandmother, mother and myself, and now my grown daughter) have always used a spice cake mix. Some people might like that better than the plain yellow cake. This is the best tutorial I've ever seen for making this cake.
I work in a nursing home baking in the kitchen so our cakes are just add water and there ready to be cooked if I add the pudding and substitute the water with the pineapple juice will it still turn out ?

I do LOVE your Site! ... I'm a single empty Nester and never did this before... I think I prefer more butter! It makes the Cake a lil moister (doesn't matter I'm eating it with Milk day 1 and Ice Cream and Milk day 2 and in 2 days I will consume it all! ... it is a treat and rare but I LOVE IT !
I don't have a recipe for a bulk cake mix because I usually make my cakes from scratch when I make them. Bulk cake mix is unnecessary in my opinion because the baking powder and baking soda can lose their oomph so if you make it and don't use it, you have wasted all those ingredients. Additionally, when making cakes from scratch it is important to mix things in a certain order for the cake to turn out right. Cake mixes contain a lot of binders, fillers, starches and stretchers to help facilitate the smooth transition of all the ingredients. You don't have to use a cake mix for this cake. You can just use my Old fashioned yellow cake recipe instead. I don't have any plans to make a video on a bulk cake mix for the above mentioned reasons. There are lots of recipes available on line for those. However, I don't make cakes often enough to make a bulk mix.
I made your pineapple upside down cake today and it was a huge hit, there wasn't a single piece left and several people asked for seconds. The yellow cake was moist and tasty and the brown sugar topping was delicious. Your step by step instructions were clear and easy to follow.
