This video shows a demonstration of Pinsa production in the Royal Kaak Technology Center. Pinsa, a distinctive pizza related product originating from Rome, has been steadily gaining popularity year after year.
The Pinsa Romana style has several unique characteristics that set it apart:
• High hydration level of the dough (70-85%)
• Mostly bulk-fermented dough, resulting in a lighter and airier texture
• Distinct oval - or rectangular shape with rounded edges
• (Hand) docked, to create its distinct appearance and texture
From midsize to industrial bakeries this production line can be designed to fulfil production capacities between 1.000 and 4.000 kg per hour (2,205 to 8,820 lbs per hour).
