Pinto Beans Under Pressure

This is a delicious pinto bean recipe, from dried beans (no soaking) to "done" in 50 to 55 minutes, depending on your pressure cooker. If you're a bean lover like I am, you will enjoy this recipe or adjust it to suit yourself and use the spices of your choice.
The easiest way to judge the amt. of water is to double it from the cups of beans you use: 2 cups dried beans=4 cups of water, 4 cups of beans=8 cups of water and so on. They'll turn out perfect everytime!! My recipe is below:
3 cups dried pinto beans that you've washed
1 tbsp. olive oil or bacon drippings
SPICES
2 tsp. onion powder
2 tsp. chili powder (I used Mexican)
1 tsp. cumin
1/2 tsp. ground pepper (fresh if possible)
1-1/2 tsp. salt
1 tblsp. liquid smoke
Water to cover 2 inches above beans or for 3 cups of beans use 6 cups of water (it's easier to measure that way)
Place the oil or bacon drippings in bottom of the pc
Add the washed 3 cups of pinto beans
Add enough water to cover the beans by 2 inches
Add all the spices & give it a stir
Place lid on making sure it's on properly
When it comes to pressure and the pressure regulator is "jiggling" start the timer for 50 to 55 minutes.
Lower the temp on stove until you have a gentle jiggle of the regulator.
When timer goes off, carefully move the pc to the sink and run cold water on the lid until the pressure release valve drops (you can safely remove the pressure gauge at this time)
Open the cooker away from you, stir your finished beans and enjoy!!

I have cooked pinto beans on stovetop for years, I was always afraid to cook beans in pressure cooker because of very bad experience my had when I was young with cooking beans in one, it exploded beans was on ceiling and everywhere. You tutorial was wonderful your explanation of everything was very professional! My beans in 55 minutes came out like I had cooked them all day for hours, they was even thick just the way we in Kentucky love them. I will use this often I am sure. I used just Tablespoon of bacon grease and some salt pork and pepper.. omg they are perfect. Thank you and have a very 🥳 Happy New Year Be proud you just taught an old dog a new trick, this 73 year young lady just learned how to Do Pinto beans perfect in 55 mimutes

I just made a 2 lb bag of pinto beans using you recipe. Only changes were I used my electric Cuisinart pressure cooker and forgot to add any bacon grease or oil. They are DELICIOUS! Thank you for sharing.

Well done and worked well, had to watch it again. I seem to get tough skins when I use the slow cooker but this worked really well using the 2 inch water rule.

There is nothing better than a good pot of pinto beans. The bacon grease sure adds a lot of flavor. I have never made pinto beans in a pressure cooker but will sure try it. Sounds so good. Thank you.

My husband does not like thin soup beans, So I take off the lid off and boil for about 20 minutes , Makes the soup of the bean thicker, & the beans much more tender. Thank you for the video !!!

Thank you for this video. I looked for an owners manual on line and now they are calling our pressure cookers “vintage” pressure cookers. Can you believe that? I could find my owners manual anywhere and it is a relatively new one at that. So thank you for cooking your pintos the old fashioned way as well. I’ve been sick and I’m trying to get back to cooking and wanted my beans and forgot how long to cook them in my PC. God bless you sister. Take care. 💜

@@RedLily5150 I knew what you meant. If you don't soak your beans and if I could redo the time on pressuring the pintos, I'd go longer...probably an hour and 15 minutes. They were done but not as soft as I like them...look online for the name of the company that made your pc...call and ask them for an owners manual. My Presto is at least 40 years old and I totally love it. I use it at least once a week. Use a pipe cleaner to make sure the vent is completely clear. And make sure that top rim is dry so you will get a good seal before you close the lid on. What you want is the petcock to be gently rocking back-and-forth. I would prefer my beans to have less liquid when they are done. But I guess that’s a personal preference.

I just bought a new electric pressure cooker and my second recipe I made was Navy beans and Ham Hocks with non-soaked beans. This pressure cooker has changed my life. Thank you so much for your video. I've come to realize that I'm too old and disabled to use a stove-top pressure cooker, and now need an electric one that turns off automatically. My health no longer allows me to stand over a stove to monitor the jiggle. I've been wanting to use pressure to cook quickly, but I know I can't do what you're doing here. I do love that you are still cooking this way, and when you get older, you might like an automatic electric pressure cooker. Best wishes.

Thank you I just started using a pressure cooker for pinto beans kind of hit and miss. But now I know. My 1st job as a kid was to sort and wash the beans back in the day there was all kinds of rocks and some other type of beans My mother who was Mexican. God rest her soul.said to take out halfs and the beans that float. I don't know why! Any one. Bought the big bag pinto beans from Costco hardly any rocks. Still had bad one and halfs

I was raised on "Soup Beans - aka Pinto's but with creamy gravy - not water and pinto's." I love them. I just received an electric pressure cooker and will never go back to "Grandma's pressure cookers. They are two piece, non stick, safer, non-stick and wonderful from vegetables to meats to soups to beans. This is a great video. Thanks for sharing. I still "brine" my pinto's for up to 24 hours with a couple of tablespoons of salt prior to pressure cooking to add to the tenderness of the bean. I have found that brining your beans makes a big difference in both flavor and texture.

Pink Turtle Hello Pink, the beans are watery because of the fear of not using enough water. As a bean lover you know how much beans absorb water and swell while cooking. A little less water could be used to produce a more gravy-like broth (which I love too) You can also let the beans continue to cook after pressuring has finished, with the lid off to thicken the broth. Thank you after watching for videos on pressure cooking beans this is the first that I actually showed the gigolos with my father called it on the fast speed and then the slower when you turn the heat down that was my concern is how high the start of beans and hello to turn it down to you so thank you so much and now I can go make myself a nice pot of beans

I hope that you see this comment. I have just come across your video as it is time I learned how to use the 'vintage' stove top pressure cooker that I have inherited. One question I have is ... when doing normal pressure canning, you have to let the steam vent for some minutes before putting the regulator on. But it looks like this isn't necessary when using the stove top? You put the regulator on right away? Thanks for your reply if you catch this video. I love the variety of spices you are using - made my mouth water just looking at them. Great instructional video!

Hi! ALL stove top pressure cookers must be vented for 10 minutes before putting the regulator on but not so with an electric pressure cooker. Do not ever skip this step ever. This releases the trapped air inside so it can pressure properly. I hope this helps!!

I tried this tonight. I had some mexican spice chili. Its much better thsn the other dpice in the jar. It's not so overpowering but no bacon drpp i ngs. I ended up making due with ham slices but the flavor when done was great. Unfortunately i need more practice with my stovetop pressure cooker. Not much liwuid but i had to cook twice. Firdt time sround not done. Flame too low. Second time didnt sdd enough wster. I need practice but i do lovr the stovetop pressure cooker. I ess slmost tempted to use my electric one but yhen i said nope. Kerp it with this one. I need to repest the recipe sgain but the glavor wss good.

Thanks so much for the video. I've been afraid of pressure cookers but recently decided to order one for cooking beans especially. Can't wait to try out your recipe. My only tip would be to not use a metal spoon- as it scrapes the metal pan and has been linked to Alzheimer's and other bad things. I try to use wooden or plastic when dealing with any type of metal pan. Thanks again!

Hi Sabrina, this pressure cooker is stainless, not aluminum (which is linked to Alzheimer's) The combination of these spices were great but use the spices of your choice. Thanks for watching and commenting!

***** The presence of aluminum in the bodies of Alzheimer patients has nothing to do with the metal from cooking food in aluminum pans. Its due to the bodies inability to dispose of the trace amounts of aluminum that come into us naturally through our food intake. Aluminum does not CAUSE Alzheimer's, its a symptom of Alzheimer's.

Lady you are a trip!!! Nice video and I may try to cook dry beans like you do, but I will be carefully watching my pressure cooker!! I just ordered the Instant Pot electronic pressure cooker/slow cooker from Walmart and I think your dry bean method will work better in it than it will in my Fagor and T-Fal stovetop pressure cookers and I will have less chance of an exploding pressure cooker and beans all over my kitchen!!

+Pappy Hi Pappy, My name is Linda, please refer to me as Linda, not lady. Your pc will not explode if you add the oil or bacon grease...promise!. I made these beans Wednesday in my electric pc and cooked them 55 minutes. They were perfect but I had to let them "boil" in the pc with the lid off after they cooked because the juice or pot liquor wasn't thick enough to suit me. I hope this will help you in your endeavor!!

+Jessica Dailey I really agree, slow cooked is best. The "pot liquor" is thicker...but it takes quite a few hours to slow cook. That's why I like using a pressure cooker! 55 to 65 minutes (depending on how old the beans are) and you'll have delicious pinto beans. Thanks for watching and commenting!!!!

I do mine in quart jars. This way I can have beans for supper and the rest get placed in the pantry for later on in the month. I use an old lid for the quart(s) I'll eat today, - Be sure to mark em. - and New lids on the jars I'll be saving for later.

I just made pinto beans this morning on the pressure cooker but it didn’t come out too good (new cook). I didn’t add spices, only salt and the beans over cooked since they were broken. Thanks for the tip! Quick question- what color are the rocks usually? I sorted the beans one by one last night before soaking but didn’t find one rock. Hopefully they’re not the same color as the beans!

I cook mine on stovetop pic..it takes 55 minutes. Elect. Pc takes the same...I have started soaking my beans for at least a couple hrs..seems to do better

On youtube, this one lady said water and lemon juice soak, rinse until the beans rinse clear; the point was the non-flatulent style of cooking. I am trying this out this morning. Soaking for 2 hours in lemon and water then rinse, rinse, rinse. Then I will do what this lady is doing since I have the same pressure cooker. I want to followup on this. Today is 9/12, almost 9 a.m.

Dear Lady: I do the same thing in my Cuisinart Electric Pressure cooker in 35 Minutes without soaking. I add the spices I like and a piece of smoked ham. I also use less water. No waiting, no baby sitting my pressure cooker. Just put it on high pressure for 35 min. and forget about it. I have 4 Presto pressure cooker (stainless steel) and I do not use them at all because I hate to sit in the kitchen and baby sit them while they are cooking. The Cuisinart electric pressure cooker does the work by itself. No watching and no heat regulation. Just put it to work and leave the kitchen. That is all.

I’ve tried both adding salt before cooking the beans and adding salt after. If you add your salt after the beans are full cooked they cook faster and you end up adding less salt.

i love a good pot of beans along with corn bread . my x mother in law taught me well. she was from tennessee . she was a great southern cook. i miss n loved her so. we remand friends until she passed. but i noticed they dont get that creamy broth like mine do in a pot on the stove. but this is much faster. ty 4 sharing n have a great rest of the weekend.

Hi Kathy jo, these pinto's were cooked until done and the broth did taste wonderful. I'm not certain (water doesn't evaporate in a pc like it does on a stove top but you could try pressuring 60 to 65 minutes to see if it thickens the liquid. Theres nothing like a really good pot of beans and cornbread. Thanks for watching!

Looks wonderful!!!!! You and that pressure cooker made me nervous this time...LOL I wanted to ask if you have ever used something called ham seasoning? It is made by Goya. It is so good to add to beans, cabbage, really any vegetable it gives it a ham flavor without adding the fat. They do sell it at Wal-Mart. Can't wait for the next video....deb

HI Deb, I've never heard of Goya Ham seasoning but I'll look for it on my next trip to Walmart. Next time I make these beans I'll pressure for 60 minutes. They were done at 50 but 60 minutes would have made them more to my liking. The seasoning was great but I will add more salt next time. What made you nervous about this video? Was it because it is a stove top pressure cooker? I was never in any danger (or was the pressure cooker lol!) did I give you impression something was going to go wrong? Are you looking for another pressure cooker video or just a video? I'm trying to decide if I've done enough pressure cooker recipes. I think I'm going to put regular recipes in between for those who don't pressure cook. Thanks for commenting Deb!

Goya products are pretty good. Chick peas, canned lentils etc....never heard of the ham seasoning. Will have to look for it.

You need some bacon, carrots, onions, and jalepenos then you got some damn good beans.

Hi RUGOHAN, I'll go along with the jalapenos and onions (I used onion powder) but I don't want carrots in my pinto beans. I also used bacon grease as my oil. These were great tasting beans but would have been better if I'd used a cut onion and as you said, a few jalapenos. I also added some cayenne pepper...so close to what you called damn good beans but no cigar LOL! Thanks for watching and commenting!

Doesn't the salt make it harder and longer to cook the pintos ? usually they say, add salt afterwards, if I'm not mistaken the reason you would use a pressure cooker was to speed up the process, why would you slow it down or didn't you already know that ?

Surprisingly, salt didn't slow down the process and the beans were perfectly seasoned.

Hi Dayna, there are no adjustments necessary as long as the bean/water ratio does not go over the 2/3 full mark on your pressure cooker...the water amount will always be 2 inches above your beans. If I was making these again, I would pressure for 1 hour instead of 50 minutes. They were done in 50 but not as soft as I like my beans...don't be afraid, they will turn out fine. Don't forget to add the oil or bacon grease, it's very necessary. Get back with me and let me know how they were. Thank you for watching and commenting

I have an electric also and have a video...look for that one it says Pinto Beans in an Electric Pressure Cooker Under Pressure....it takes mine 55 minutes in my electric one.

+Estelle Butler I think the suggestion of 2 inches was as a safety factor. I think 1-1/2 would do if you don't forget to add the grease. I made them in my electric pc last week. Pressured for 55 minutes & the beans were perfect..but again too much juice and too thin for my liking so I took the top off and let them boil (reduce) about 30 minutes....perfection!!

My father was from Virginia and he never put onions in them and they were delicious then my brother tried to copy them and added garlic and onions which ruined them.

The amount of pressure you use depends on how far above sea level you are so I cannot answer this for you...you must find that out for yourself. So sorry. TFW God bless

This was the first video for me cooking dried beans...I don't add salt in the beginning anymore and it still takes a long time to pressure beans. We have very hard water here. One of my subs asked if it could be the hard water and I tend to agree. I appreciate you watching and commenting. Linda

How do you get the juice to get dark

The juice color comes out of the beans and turns dark on it's own while it cooks. You don't do anything on your own to turn it dark. I hope this helps! TFW God Bless, Linda

are u sure?? 50 min under pressure!? I have regular stove top pressure..cooking pinto is only 5 minutes after its been soaked for several hours, or over night.

+stndrds79 These beans were washed and picked through. They were not soaked any time at all. I'm SURE it's 50 to 55 minutes (pressure cookers don't always use the same amount of time)

dry white beans washed and right from the bag take about 20 minutes. Great Northern beans, washed and right out of the bag (dry beans) will take about 25 minutes. This is for DRY beans only. I hope this helps!

Picco, I discussed the cooking time with another friend and we came to the conclusion that it takes beans longer to cook (in a pressure cooker) in hard water. We have very hard water here. I have cooked them up to 55 minutes also. They come out very tasty! Thanks for watching and commenting!!

+Marty Mar Hi Marty I made a delicious ham bone soup (which is full of, well actually 15 different beans) in one of the electric pressure cookers and I don't remember which one. The video is on my channel under ham bone soup. I've had 2 elite electric pressure cookers, an 8 quart and the 10 quart. They both failed and were sent back. The company did not stand by their 1 year warranty so I'll never buy elite again. I don't know how I ended up with 2 lemons!! My favorite pc's are Cooks Essentials and Wolfgang Puck. +Marty Mar With Elite, don't pay any attention to a warranty they offer because they won't honor it. My 10 qt. got sent to Calif. 4 times to be "fixed" and came back worse than when it left...the cost on me was $40.00 for the 1st trip...they paid for the other 3. They wouldn't give me a new one and kept sending it back to me broken waiting for the warranty to be up so I'd be permanently stuck with it. They have terrible customer service! HSN refunded me when I told them the story and by that time I'd had the pc 8 months...all of this started happening 5 weeks after I bought it and I had only used it 3 times!!! I honestly hope you get a good one!! If you have time to cancel it, I would or send it back within the 30 day return time and buy one I mentioned earlier. They're much more reliable. You won't be sorry. It's a lot of money to spend. If you don't want to return it, use it as much as you can before your 30 days is up..if it starts "recycling" constantly in the middle of a recipe, it's defective...return it!!! I hope this helps.

+malfador70 Hi malfador70! I have 3 pressure cookers. The other 2 are electric and I use them all the time. This one as you can see, is a stove top and you're right, I don't use it very much but it's a great back up if anything goes wrong with the electric ones. Thanks for watching and commenting!!

***** Well then it doesnt make any sense then, if it takes me and others 10-15 mins it should take you the same because then you are wasting a lot of time cooking then, that is the purpose of the pressure cooker to reduce time to soften them.

I've done dried beans in a stove top pc and an electric pc. They both run from 50 to 55 minutes. The older the beans are the longer they take to cook. If not using a pc and just a pot on the stove, they'll take 2 to 3 hours so I don't know how yours are only taking 15 to 20 minutes....that doesn't make sense to me. If the beans aren't soft, they aren't done. I'm not going to try to solve this mystery but will continue using what works for me.

***** What doesnt make since to you? there are vidoes that show they are done in 10-15 mins. I can make a video with no editing or cuts so you can see that it only takes 10-15 mins. My beans are soft in 10-15 mins Other people have discovered the same as well and have told you about it. I am not going to eat them if they are not soft. And I am not going to make a claim that it takes 10-15 if it really takes and 1 hr. It would be hypocrictial. So why dont you try 10-15 mins ....tops 20 mins.

Wil, I've tried a less amt. of time and my beans aren't done. You cook yours the way that works for you and I'll do the same. This isn't worth arguing over. My beans simply don't cook in 10 to 15 minutes, but thanks for the advice. Linda
