Cowboy Pinto Beans Recipe

1 pound dried pinto beans
1 large yellow onion, sliced
1-2 jalapeños, diced
1 ham hock (8 to 10 ounces)
1 1⁄2 tablespoons dried cilantro
½ tablespoon Red River Ranch Original Seasoning
½ tablespoon Mesquite Seasoning
1. Pour the beans into a large soup pot. Pour enough water over the beans until they are covered by about 2 - 3 inches.
2. Add the onion, jalapeño, ham hock, and cilantro. Cook over high heat until the mixture reaches a rolling boil, stirring occasionally.
3. Cover and boil hard for 30 minutes, stirring occasionally. As soon as the beans are boiling, you may need to add more warm water to keep them slightly covered and throughout the cooking process.
4. Reduce the heat to medium. Stir in the spices. Cover and simmer for 11/2 to 2 hours, stirring occasionally, until the beans soften. Season again to taste, if necessary.

If buying dried pintos bagged , my mom would always pour the dried Beans out on the table and look/ sift thru them bc lots of times there will be little stones / rocks in the bag from the manufacturing plant. You’d be surprised how many stones you’ll find . Then she would rinse them thru a colander before putting in the pot with fresh water. Just a suggestion

In West Virginia my grandmother would use 2/3 day leftover beans and mix in flour and smash and make "frijoles fritters" kinda like a potato cake or crab cake but so good. Love your recipe.

I grind beans seeds rice and use as my flour healthier in coffee grinder Used camp coffee in gravies,soup stock Nothing wasted bc were settlers cowboys etc so limited means

one of my grandfathers favorite things to cook was homemade beans usually over the 4th of July and his homemade burgers on the grill along with coleslaw and watermelon and the star of the show was his beans...you are the best Kent!

I love to watch Kent cook. I grew up on food like this, my grandfather was born around 1870, and all of my mother's recipes were very similar. It's nice to see that people still cook this way. We always save the hambone, and buy 2 ham hocks to cook lima bean soup. I wish I had access to hambones on a regular basis, (I'm jealous). Thumbs up, happy cooking.

You can get smoked ham hocks that will do the trick at a lot of grocery stores. HEB here in Texas has them.

Love your videos. My mom taught me to add baking powder just a teaspoon or so to a boiling pot of beans. Let it boil for about 10 min then lower temp and simmer. Add your spices, ham hock, bacon or whatever you want and the gas will be gone. It really works. I have made them both ways and when i don’t add baking powder, boy everyone gets gassy. So just add a little baking powder.

Some say add a tablespoon or two of Apple Cider Vinegar to the beans when you leave them to soak overnight. Pour the soaking water off - the gassy bits will go with it. Put the soaked beans in fresh water to cook.

@@BiNumLiNever heard of that. I may try. Also I do not soak my beans overnight. I clean them add to pot of water wait for it to boil add tsp of baking powder let it bubble once bubbles are gone I reduce heat and simmer until done.

Dad was from Northern New Mexico, around Sugarite near Raton, on a Cattle Ranch that's still called the 'Honey Place". He cooked beans this away. He didn't use no fancy seasoning. I remember he loved cumin.Taught me to eat Jalapeno n scrambled eggs when I was young.

Being a guy that grew up on a small family farm , I understand this man's language,and appreciate his way of cooking. Both of my parents cooked so all 6 of us kids learned how at a young age to work in the kitchen and of course doing chores around the farm everyday. Southern cooking & southern conversation. Learned the legs of a table weren't what held it up. The family gathered around it is what really matters !

I love this channel. Started watching when I invested in some cast iron. My first time making beans and first time with this recipe. A few notes: my beans never split. Also, I made the mistake of burning it a little -- not the end of the world, but not a taste you want to introduce. I love spicy food, but maybe go easy on the jalapenos. Still a great recipe. Love it!! I don't have me a big bertha, but this is still great. Just gotta keep stirring and give it some TLC. Best ingredient to any recipe: some TLC.

I've learned that if you soak your beans overnight and pour out the soak water and rinse the beans before cooking then they don't cause so much gas.

Peel a Potato or 2 and drop them in while you do the boiling, throw out the potato a little bit before it starts to fall apart.

They don't taste the same either. Why? Because you're getting rid of some of the sugars that produce the methane. If you are afraid of the "gas" - don't eat the beans.

Soaking overnight and rinsing doesn't change anything from my experience. They effect me the same no matter what.

A good trick to eliminate gas (and it works--done it many times) is soak the beans overnight in tap water and change it out at least twice. They cook faster too after soaking. I like this cookie.

As I was packing up the beans left over, I believe I discovered something new. I believe that when I soak the beans for at least over night, I get almost double the volume of beans. Same number, but each bean is bigger.Comments?Thanks

Loved the Boy Scout story, don't blame you for wanting to get outside the blast radius. The first really good meal I ever cooked was on a Boy Scout trip, over an open fire. Hamburger, canned baked beans, a bottle of ketchup and some Worcestershire sauce. I had other Scouts bringing me their stuff, to cook, and kept the pot going for two days, just kept adding to it. We put the campfire scene in 'Blazing Saddles' to shame, big medicine to a bunch of 11 and 12 year old boys. It also instilled the love of cooking in me, first real job I ever had was in a 5 star restaurant as a dish washer, just so I could watch the real deal chefs do their thing. What I learned from them was, do the basics right, like taters and rice and beans, and then add a little twist at the end. God Bless you, and keep you, and those you love. Keep up the good work.

My Momma used the same Brand of Pinto Beans, 'cept she always poured them out on the counter and picked to darn rocks and rotten beans out, rinsed the dirt off, then put them in the Pot of water. I know you cook on a larger scale than we did, but Momma didn't want anybody breakin' a tooth on a rock and there was 5 of us kids and Mom and Dad. Love your videos Cowboy Rollins. Tonight was also the first time using my vintage Wagner Ware skillets. They didn't take much work to restore and I seasoned them - and made BACON to initiate the skillet, followed by diced potatoes. So yummy and they didn't stick. I just ordered your cookbook (two, one for my dad) and tomorrow I'll try making something from the sourdough starter that I put together tonight. This is just plain FUN. And I haven't had a lot of fun cooking for myself. Such a treat!

I grew up in Eastern Kentucky. My grandmother s and mo m made them often with cornbread , sliced onion, tomato , and fried potatoes fried in bacon grease. I love these types of fo ods.

I like to eat a lot of pinto bean sandwiches. Mash the beans with a bit of miracle whip then spread as thick as you like onto some fresh home cooked or even store bought bread. Awesome good!

I love Pinto beans, even years ago, my high school friends Mom ( Mexican American from AZ 1918, only cooked pinto beans and didn't fry them , she served them with white cheese and it went with everything. Even Ranch beans are basically pinto beans with chili powder, love those too

Now that's the correct version which is from the great state of Missouri which is the mother of the west. Don't pay no heed to what some Jayhawk tells you. They are full of every 40th bean. Vaughn

The quintessential cowboy meal! Pintos are featured in every western! Dehydrated, portable protein. Usually the beans are cooked in a cast frypan without a lid, I don’t know how a guy could manage that, it seems like it would take hours to cook a meal!

i love pintos, mostly cause theyre cheap. you can refry em an cook em up with some eggs, onion an seranos or add some water an flour to em an cook em up like a tater cake. very versatile

Last month we bought 7 of them 30 oz. Atwater, Mexifornia make Pinto Beans in a can for .99 cents... What a bargain!

A pot of these is bubbling away on the stove right now. Just got done with some pork chops bathed in lime, cooked over hardwood. Thank you for your contributions, it's a shame some people have to comment just to be rude and condescending. Can't go wrong with your recipes here in central Pennsylvania!

Try Anasazi beans from Adobe Mills, gourmet beans from SW Colorado, dry land grown.. they are good but you need to put in a bean ladder....let the little toots out

Beagles are mouthy dogs, really sweet The can't be alone. Need another companion animal/ dog in our personal experience We gave loud one to neighbor Hunter farmer but mouthy one kept coming back w his dish for his bro We had to give both to them.

So...you don't need to soak the beans for a few hours or overnight? I always clean out any rocks and bad beans and soak. Just wondered if you don't need to soak them. Thanks for sharing!

Keeping them in a rolling boil longer, as he did, eliminates the need to soak. On the other hand, soaking them eliminates the need to boil and trims off a little time on the stove.

Someone once told my wife's aunt that to keep them from being gassy you poke a hole in them. They came into the kitchen and found her poking holes in the beans. They asked her what she was doing and she said she was defarting them. Sigh.

Years ago while working for the U S Forest Service an old skinner got the new Troop. He took out the small match box, drew a cross in it, and numbered it 1 thru 4 then threw a Pinto bean in the box and had the new troop shake the box and give him the number. After about 5 times, the young man inquired how long it went on. The old skinner told him "until you shake the Fart out of that Bean. Got Cha! LOL

I make my pinto beans in a pressure cooker, and they come out perfect nearly every time. I am going to try your recipe next time we want a soup bean dinner!

@@ptudor63 I'm from Texas & add can tomatoes, fresh cilantro at the end, garlic, onion, cumin, pepper. Sometimes bell pepper & celery. It's difficult to "mess up" pinto beans.

Kent, I think you're taking a big chance by not sorting those beans before cooking. Someone could easily chip a tooth on a rock, I have found dozens of rocks in bags of beans over the years.

I started helping my mother sort beans back in the '50s. I've been cooking for almost 60 years. I think that qualifies me to have an opinion regarding safe handling of food.

When I trim my spare ribs for the smoker, I smoke the trimmings for about thirty minutes...then freeze them. I use the smoked trimmings in my beans...awesome.
